It’s mango season here in the Caribbean and that means that there are plenty to go around. Here is this delicious Mango Pancakes. recipe, bringing the island vibes to your breakfast table. Won’t you try it today?

Ingredients

  • 1 & 3/4 cups flour
  • 2 & 1/2 teaspoons baking powder
  • 1/4 – 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1cup milk
  • 1 egg (large)
  • 3 tablespoons melted butter
  • 1 cup fresh mango, diced
  • 2 teaspoons cinnamon powder
  • 1/2 teaspoon clove powder
  • 1 teaspoon ginger powder
  • 1/4 teaspoon grated nutmeg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 cup pecans, diced
  • 1/4 cup chocolate chip (semi sweet, optional)

Instructions

  • in a blender cup, add diced mango and sugar and blend until smooth. set aside
  • mix all dry ingredients in a large bowl and set aside. next, in small bowl mix the milk, egg, extracts and melted butter thoroughly.
  • to the dry ingredients, add the mango sugar blend and the wet ingredients. mix well until almost combined. add in pecans and gently fold in.
  • allow the batter to sit for a couple of minutes to allow flavours to combine fully. this also helps in developing the gluten in the flour, giving the pancakes a nice rise.
  • heat a gridle on medium high, brushing it with oil or butter and add the pancake in desired shapes (i used a 1/4 cup measurement). allow to cook 2-3 minutes on each side.
  • serve with syrup of choice. add sliced mangoes for aesthetics or prefrence.

With mango in season, it’s the perfect time to experiment with this delicious Mango Turnover recipe. It’s delicious and flavourful and is perfect to add to your picnic basket.

Ingredients

  • 1 pastry dough prepared (or you can check out my Chicken Pot Pie recipe to see how)
  • 1 cup ripe mango (about 1 large mango cut into cubes)
  • 1 teaspoon corn starch
  • a pinch of salt
  • a pinch of cinnamon (optional)
  • a pinch of nutmeg
  • 2 – 3 tablespoons sugar
  • 1 teaspoon vanilla extract

Instructions

  • preheat oven to 350 degrees f
  • in a skillet on low heat, add in all ingredients with the exception of the vanilla extract. mix well until combined
  • cook until softened (roughly 3-4 minutes)
  • once cooked, turn of heat and add vanilla extract. mix well.
  • allow the mango mixture to cool completely.
  • on a lightly floured counter top, add puff pastry dough. cut into desired shapes and size.
  • add about 1 teaspoon of the mango mixture to the center of one side to the cut dough and fold the other side over it, making sure to crimp (seal) the edges together using a little water.
  • place on a baking sheet lined with parchment paper and place in freezer to rest for 20-30 minutes.
  • remove and egg wash the top. bake in preheated oven for 25-30 minutes or until golden brown.
  • once baked, remove from the oven and allow to cool in the baking sheet for a few minutes.
  • remove and place on rack to cool completely before serving
  • enjoy!

Easter is a round the corner and that means it’s time to get some baking going. This delicious Hot Cross Buns recipe is the perfect bread recipe to add to your menu. This bread is best eaten with a savoury side. give it a try today.

Ingredients

  • 4 cups flour
  • 1/2 cup sugar
  • 1/2 cup butter/margarine
  • 3/4 cups milk
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 2 tablespoons yeast
  • 1 egg yolk
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/4 – 1/2 teaspoon freshly grated nutmeg
  • 1/4 teaspoon all spice
  • 2 teaspoons vanilla essence

Ingredients for the glaze to make the cross

  • 3 cups powdered sugar
  • 1 tablespoon almond extract
  • 1 tablespoon milk (to be used as needed. start out with a little at a time)

Instructions

  • on low heat, place a sauce pan and add the milk and margarine. stir occasionally as the butter melts. next add in sugar and stir until dissolved.
  • add in water, essence and egg yolk. stir until well combined. remove from heat and set aside to cool at room temperature.
  • in another bowl, mix all the dry ingredients together and make a while in the middle. add in the cool wet mixture, a little at a time, until a sticky consistency is achieved.
  • place sticky dough on a lightly floured counter top and knead for roughly 3 minutes until a smooth ball is formed.
  • place the dough in a lightly greased bowl and set aside in a warm area to rest for 35-40 minutes.
  • punch the dough in the middle to deflate and place onto the floured surface. cut into desired shapes equally.
  • form in to smaller smooth balls and place on a baking sheet to proof for 1 hour.
  • preheat oven to 350 degrees f
  • once the dough has proofed, brush the top with an egg wash and place in the oven to bake until golden brown (about 40-45 or minutes depending on your oven)
  • once the buns have baked, remove from the oven and allow to cool completely.
  • while the buns are cooling, go ahead and make the glaze as shown in the video. place the glaze in a pipping bag. be sure to cut the end of the bag and with steady hands, make the cross on the buns.
  • allow to cross buns to seat to all the glaze to firm up and enjoy with some cheese!

This delicious Meat Pocket Grenadian Style can be found in any Grenadian or Caribbean pastry shop. It’s flaky crust infused with the well seasoned salami will have you going back for more.

Ingredients for the dough

  • 2 cups all purpose flour
  • 1/4 cup (4 ounces) shortening
  • 1/4 cup (4 ounces) margarine or butter
  • 1/8 teaspoon salt
  • 1/4 teaspoon sugar
  • 1/4 cup very cold ice water (may need more or less)
  • 1/8 teaspoon cayenne or black pepper

Ingredients for the filling

  • salami grated (i used turkey sausage simply because i didn’t have salami)
  • green onion chopped
  • fresh thyme
  • grated cheese (optional)
  • 1 teaspoon grated onion
  • 1 teaspoon grated garlic

instructions for making the dough

  • in a large bowl, add flour, sugar and salt. mix well until combined. next cut in the margarine and the shortening until a crumbly texture is achieved.
  • slowly but quickly add very cold ice water until a sticky dough texture is formed. next place on lightly floured countertop and form into a dough. wrap with plastic wrap and place in fridge to rest for about 30 minutes.

Instructions for filling

  • in a bowl, add grated salami, pepper, grated onion and garlic, green onion and fresh thyme and mix well. set aside until ready to use.
  • once dough is rested, place on lightly floured countertop. form into a log or roll out into a rectangular shape (not too thin not too thick).
  • cut into equal squares (big or small). place the filling in the middle and add grated cheese if using.
  • take one side of the dough and cross it over to the other side or middle of the filling and do the rest of the side the same. you should get a pocket shape (hence the name)
  • place on baking sheet lined with parchment paper and egg wash the top. place in preheated oven of 375 degrees f. bake until golden brown (30-35 minutes)
  • remove from oven and allow to cool before serving.
  • enjoy!

This delicious ” Swedish Tea Ring Bread“, is the perfect addition to your Christmas breakfast menu. A little on the sweet side, It’s wonderful flavour will have you going back for seconds. Don’t be afraid to make this recipe your own.

Ingredients

For the dough

  • 2 cups all purpose or regular flour
  • 6 tablespoons milk
  • 1/4 – 1/2 cup sugar (this depends on your level of sweetness desired)
  • 1/4 cup margarine
  • 1/4 cup water
  • 1/2 an egg yolk
  • 1 tablespoon yeast ( i used less as i am trying to not use too much for health reasons)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

For the filling

  • 1/4 cup raisins
  • 1/4 cup dried pineapple cubes
  • 1/4 cup dried mango cubes
  • 1/4 cup dried cranberry
  • 1/4 cup dried pawpaw
  • 1/4 cup walnuts, patched and chopped into small pieces (this is for the crunch)
  • 1 tablespoon cinnamon
  • 1/8 teaspoon ground nutmeg (optional)
  • 3 ounces margarine, melted
  • 1/4 – 1/2 cup brown sugar
  • 1 – 11/2 teaspoon vanilla essence

Instructions

  • in a large bowl, add flour, yeast, and salt. mix thoroughly and set aside.
  • in a skillet on low heat, add milk and margarine. allow the margarine to melt. next add in the sugar and stir until dissolved.
  • add in egg yolk, water and essence and stir thoroughly until combined. remove mixture from heat and allow to cool until warm.
  • add the wet ingredients to the dry mixture and form a rough dough. place on a floured counter top and knead for 3 minutes until smooth.
  • place in a greased bowl and sided aside in a warm corner of your kitchen to proof (about 1 hour).
  • while the dough is proofing, make the filling.
  • add the dried fruits, cinnamon, nutmeg and sugar in a large bowl. mix well. next add the vanilla and melted butter and mix well. set aside until ready to use.
  • once the dough has proofed, place on floured countertop and using a rolling pin, roll into a rectangular shape.
  • place filling on the dough, careful not to go too close to the edge for easy forming of the ring.
  • next roll the dough from one end to the other. be sure to seal the end with some water or butter.
  • next carefully form into a circle, tucking in the edges one into the other and sealing with some water.
  • allow to sit for about 30 minutes before making your incisions (helps with cutting easily once cooled). egg wash and place in a preheated oven at 350 degrees f.
  • bake for 30-35 minutes or until nice and golden brown.
  • allow to cool completely before cutting.
  • a simple glaze can be made to place on the top for decorative purposes.
  • enjoy!

  • 1/4 cup flax chia blend (optional)
  • 1/2 cup dried cranberry
  • 11/2 teaspoon yeast
  • 1/4 teaspoon baking powder

  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves

  • 1 tablespoon margarine

  • preheat oven to 350 degrees f
  • in a stand mixer or large bowl if kneading by hand, add all dry ingredients including the cranberry and margarine. mix until combined.
  • next add in oil and warm water and continue mixing. add buttermilk a little at a time.
  • knead for 8 minutes. be sure to add extra flour a little at a time if the dough is too sticky.
  • place in greased bowl and allow to double in size for about an hour.
  • once doubled in size, punch in middle to deflate.
  • place in mixer and knead for a further 3 minutes. place on lightly floured counter top. knead gently and form into bread dough.
  • place in greased loaf pan and allow to double in size (about 45 minutes). place in preheated oven and allow to bake until golden brown (about 55 minutes to 1 hour.
  • remove from oven and allow to cool for 10 minutes in pan then place on rack to cool completely before slicing and serve.
  • any savoury side or condiments of choice can be used.
  • enjoy!

Ingredients

  • 1/12 cups all purpose flour plus more (just in case it’s needed)
  • 1 tablespoon flax chia blend
  • 2 tablespoons oats soaked
  • 1/2 – teaspoon yeast
  • 1/2 teaspoon baking powder
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 2 twigs green onion chopped
  • 1 large broad leaf thyme, diced
  • 1 large chado beni leaf, diced
  • 1/2 medium oninon freshly grated
  • 3 medium sized garlic cloves, grated
  • fresh basil, diced
  • a few small leaf basil
  • 1/4 cup warm water
  • 1 tablespoon oil or margine
  • oil for frying

Instructions

  • in a large bowl, add warm water, yeast, baking powder, salt and sugar. give a quick whisk.
  • next add in soaked oats, flax chia blend and seasonings. mix well. add in flour a little at a time until a smooth sticky dough is formed. cut into smaller pieces.
  • allow to rest in a warm space in your kitchen to proof until doubled in size.
  • place some oil in large skillet and allow to heat up. be sure to keep it at medium high and keep on eye out for if it starts to get too hot. simply lower the heat.
  • form dough in to circular shapes and fry until gold brown.
  • serve hot with any side of choice.
  • enjoy!

  • 21/2 teaspoons yeast
  • 3 tablespoons sugar
  • 12/3 cups warm water (more or less or needed)
  • 1/4 cup coconut oil or any oil of choice
  • 1/2 teaspoon salt
  • 2 tablespoons flax chia mix (optional)

Instructions

  • preheat oven to 350 degrees f
  • in a mixer bowl add flours, flax chia mix, yeast and salt. mix until combined. next add in coconut oil and mix.
  • slowly add warm water and knead until a soft dough is formed. (8 minutes)
  • place in lightly greased bowl and allow to double in size. punch in middle and return to mixer and knead for a further 3 minutes.
  • place on lightly floured surface and give a gentle knead and cut into 2 equal parts.
  • form dough into breads and place in lightly greased loaf pans. allow to double in size. place in preheated oven and bake until golden brown. 50-60 minutes or depending on oven used.
  • remove from oven and allow to cool 10 minutes in pans before transferring to a rack to cool completely.
  • slice and serve with anything on the side.
  • enjoy!

  • mix salt and flour together. next place in a stand mixer flour mixture, melted margarine and yeast. mix until combined.
  • add sugar to water and stir until dissolved. next pour into dry mixture and knead for 8-10 minutes. this a sticky dough
  • place dough in a lightly greased bowl and allow to sit for 45-60 minutes or until doubled in size.
  • once proofed, punch in middle and place on floured countertop or pastry and knead gently for 1 minute. cut into 4 or 5 equal parts (depending on the size preferred) and roll into small balls.
  • using a rolling pin roll out balls into even circles. place margarine or butter in middle of circle, and fold one half over the other. pinch to seal in the margarine to avoid oozing during the baking process.
  • next add more margarine to the top of the dough avoiding the edges and fold over to form a triangle. pinch to seal and place on greased baking sheet.
  • allow to rest for 10- 15 minutes and place in preheated oven to bake until golden brown.
  • once finished, while hot brush with melted or softened butter to give it a glossy finish. allow to cool before serving.
  • enjoy!
