Ingredients

For the coconut bake

2 cups all purpose flour

2 tablespoons flax chia blend mix (optional)

1 1/2 tablespoons margine

1/2 cup coconut milk

1 tablespoon sugar

1/4 teaspoon salt

3/4 tablespoon baking powder

1 tablespoon oil-

For the smoked herring filling

  • 1 lb smoked herring
  • 1/2 cup onion, diced
  • 1/2 cup peppers diced (2 sweet pepper and 2 pimento peppers)
  • 4 cloves of garlic diced
  • green onion chopped
  • chado beno diced
  • tomatoes diced (optional)
  • 1/4 cup oil
  • 1/4 teaspoon cayenne pepper
  • 14 teaspoon dried parsley

Instructions

  • preheat oven to 350 degrees f
  • in a mixing bowl, add all the dry ingredients and butter. mix until well combined. next add in coconut milk a little at a time. mix until a dough is formed. knead for 8-10 minutes. allow to rest for about 11/2 – 2 hours.
  • while dough is resting, wash smoked herring and bowl for 10 minutes.
  • cut up seasonings. next in a sauce pan add oil and chopped seasonings. mix until combined and allow it to sautee for a couple of minutes. next add in smoked herrings and any additional seasonings and mix well. allow to sautee for a couple more minutes. remove from heat once done.
  • once dough has rested, place on a lightly floured countertop and knead lightly. next cut into four equal parts and roll into small circles. add some of the filling in the middle and pinch the sides together tightly to keep any from spilling. gently form into small dics and allow to rest for a further 30 minutes
  • place in preheated oven and bake until golden brown (about 30-35 minutes or more depending on the oven used)
  • remove from oven and allow to cool
  • enjoy!
