Raisin Bread

Ingredients

  • 11/2 cups all purpose flour plus more for any additional flour needed
  • 1/4 cup whole wheat flour
  • 1 cup of mixed fruits dried
  • 1 teaspoon yeast
  • 31/2 tablespoons sugar
  • 1 teaspoon vanilla essence
  • 1/4-1/2 teaspoon freshly grated nutmeg
  • 1 teaspoon cinnamon powder
  • 1/4 teaspoon clove powder
  • 1/4 teaspoon salt
  • 2 tablespoons softened margarine or butter
  • 2 tablespoons oil
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon tonka bean grated
  • 3/4 cups warm milk or coconut milk

Instructions

  • preheat oven to 350 degrees F
  • in a mixer or large bowl add all dried ingredients and fruits. mix until combined
  • next, with mixer on low speed, add vanilla essence and oil. mix until combined. slowly add warm milk and mix until a sticky dough is formed (about 8 minutes)
  • next place in lightly oil bowl and allow to proof in a warm area for about an hour or until it has doubled inside
  • once dough has risen, punch in middle to deflate and knead for a further 3 minutes. place on lightly floured countertop and form into bread. place in lightly oil loaf pan. allow to raise for a further 45 or more minutes or until it has doubled in size
  • place in preheated oven and allow to bake for 50 to 55 minutes (depending on the oven used) or until it is golden brown
  • remove from oven. allow to cool in pan for 10 minutes. remove from pan and place on cooling rack to cool completely
  • slice and enjoy!
