This Grenadian Banana and Mango Bread recipe courtesy the Grenada Food and Nutrition Council, is the perfect dessert to have on any given day, especially with mango in season. It’s moist, delicious and flavourful and would have you eating the whole loaf if you are not careful. Give it a try today!

Ingredients

  • 2 medium over ripe bananas, pureed
  • 1 julie mango, chopped into chunks and pureed
  • 1/4 cup grated coconut (optional)
  • 250g all purpose flour
  • 2 eggs
  • 1/4 cup molasses
  • 1/2 cup sugar
  • 1/2 cup oil
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon cinnamon powder
  • 1/4 teaspoon tonka bean
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon grated nutmeg
  • 1/4 teaspoon all spice
  • a pinch of salt
  • 1/4 – 1/2 cup chopped walnuts plus more for topping
  • 1/2 teaspoon mixed essence
  • 1/2 teaspoon vanilla essence
  • the juice of 1 lime (1 teaspoon of lime or lemon zest can be used as well)

Instructions

  • preheat oven to 325degrees f
  • in a bowl, add the flour, spices and rising agents and mix thoroughly. set aside until ready for use.
  • in a large bowl, add the oil, molasses and sugar. mix well until combined.
  • next add in in the pureed bananas and mango and mix well. next add in the eggs, the essences, the lime juice and ginger. be sure to mix very well until combined.
  • add in the flour mixture and mix until combined. next add in the walnut (be sure to have extra to place on the top).
  • place batter into a greased and floured pan and give a few tops to get ready of air bubbles.
  • place in oven and allow to bake for roughly about 1 hour or until skewer inserted in the middle comes out clean.
  • once baked, remove from oven and allow to cool in pan for about 10 minutes before removing and placing on rack to cool completely.
  • enjoy!

Pumpkin loaf is simply a quick bread baked in a loaf pan. This delicious recipe, is simple, quick and easy to make, filled with great flavours. This is perfect to add to your dessert plate. Try it today.

Ingredients

  • cups of all purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 can 15 ounces pumpkin puree or 2 cups homemade puree
  • 1/2 cup vegetable oil
  • 1/4 teaspoon salt
  • 1 tablespoon pumpkin pie spice
  • 1 tablespoon vanilla extract
  • 1/4-1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 teaspoon lime or lemon juice
  • pumpkin seeds or walnuts or chocolate chips optional)

Instructions

  • preheat oven to 350 degrees f.
  • in a bowl, add flour, baking soda, salt and pumpkin pie spice. mix well to combine. then set aside until ready for use.
  • in another large bowl, add sugars and pumpkin puree. mix until combined. next add in eggs, oil, vanilla extract and lime or lemon juice to the puree mixture. whisk until it’s well incorporated together.
  • add in dry ingredients and gently fold in. add in pumpkin seeds, walnuts or chocolate chips and fold in.
  • next in a prepared pan, add the batter. place in preheated oven and bake until a skewer inserted in the middle comes out clean. (about 50-60 minutes)
  • once baked, remove from oven and allow to cool in pan for ten minutes. remove and allow to cool completely on a rack.
  • slice and serve.

Ingredients

  • 11/2 cups all purpose flour plus more for any additional flour needed
  • 1/4 cup whole wheat flour
  • 1 cup of mixed fruits dried
  • 1 teaspoon yeast
  • 31/2 tablespoons sugar
  • 1 teaspoon vanilla essence
  • 1/4-1/2 teaspoon freshly grated nutmeg
  • 1 teaspoon cinnamon powder
  • 1/4 teaspoon clove powder
  • 1/4 teaspoon salt
  • 2 tablespoons softened margarine or butter
  • 2 tablespoons oil
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon tonka bean grated
  • 3/4 cups warm milk or coconut milk

Instructions

  • preheat oven to 350 degrees F
  • in a mixer or large bowl add all dried ingredients and fruits. mix until combined
  • next, with mixer on low speed, add vanilla essence and oil. mix until combined. slowly add warm milk and mix until a sticky dough is formed (about 8 minutes)
  • next place in lightly oil bowl and allow to proof in a warm area for about an hour or until it has doubled inside
  • once dough has risen, punch in middle to deflate and knead for a further 3 minutes. place on lightly floured countertop and form into bread. place in lightly oil loaf pan. allow to raise for a further 45 or more minutes or until it has doubled in size
  • place in preheated oven and allow to bake for 50 to 55 minutes (depending on the oven used) or until it is golden brown
  • remove from oven. allow to cool in pan for 10 minutes. remove from pan and place on cooling rack to cool completely
  • slice and enjoy!

Anything Banana Bread is a must in my household. It’s filled with spices and is a must have as the perfect snack on a nice sunny day or just hanging out with friends.

Ingredients

  • 2 cups all purpose flour
  • 1/2 cup syrup/agave or sugar
  • 2 large eggs
  • 5 tablespoons melted butter or coconut oil
  • 4 very ripe bananas , crushed
  • 1 teaspoon baking soad
  • 1 teaspoon cinnamon powder
  • 1/4 teaspoon ground powder
  • 1/4 teaspoon freshly grated nutmeg
  • 1/2 teaspoon salt
  • 1/2 teaspoon tonka bean
  • 1 teaspoon vanilla extract or essence
  • 1/4 cup sliced almonds (optional)
  • 1/4 cup chopped walnuts

Instructions

  • preheat oven to 325 degrees f
  • in a large bowl, add the dry ingredients and mix well until combined. set aside
  • in another bowl, add eggs, oil, syrup, mashed bananas and vanilla essence. whisk until combined. add dry mixture and stir just until combined. add in nuts and combined
  • pour batter into a lightly greased loaf pan and place in preheated oven to cook for about 1 hour (more or less depending on your oven)

Who don’t like a good fried bake. This Corn Meal Fried Bake is perfect to try if you are one that don’t like a plain fried bake.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup corn meal/flour (more or less can be added depending on preference)
  • additional flour just in case there is a need to add more
  • 3/4 cups warm water
  • 1/2 -3/4 teaspoon yeast
  • 1/4 teaspoon baking powder
  • 2 tablespoons shortening
  • 1/4 teaspoon salt
  • 2 teaspoons sugar

Instructions

  • in a large bowl, add all ingredients with the exception of the water. mix until combined. next add in water and knead until a smooth dough is formed. cut into desired size and form into smooth balls
  • cover with a regular towel or a wet paper towel and allow to sit in warm place to double in size. next, to a skillet, add oil and allow to heat up. once the oil is hot enough, form dough into round circles and add gently to avoid spillage of hot oil. cook until nice and golden brown. remove from heat and serve hot with any side of choice
  • enjoy!
