It’s Christmas time! If you are in a Caribbean household you know what that means. We are talking fruit cakes, black cakes, sponge cakes, rum cakes, sorrel, ginger beer etc. This Caribbean Black Fruit Cake recipe is my version of a black fruit cake. I hope you enjoy and be sure to try it out.

Ingredients

  • 3 lb soaked fruits blended
  • 1 lb margarine or butter softened
  • 1 lb all purpose flour sifted (about 3 2/3 cups, be sure to weigh it out)
  • 1/2 teaspoon salt
  • 1 lb brown sugar
  • 12 eggs (1 dozen)
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon cloves
  • 1 teaspoon tonka bean
  • 1/2 teaspoon all spice
  • 1 teaspoon freshly grated nutmeg
  • lime peel
  • 1 teaspoon mixed essence
  • 1 teaspoon vanilla essence
  • 1/2 teaspoon lime juice (optional)
  • 4-5 tablespoons browning/burnt sugar (add more or less depending on how black you want your cake)
  • alcohol to pour over the cake once baked (i used quarte cup for the demonstration video)

Instructions

  • preheat oven to 270 degrees f and place a bowl of water at the bottom of your oven (this helps with the moisture of the cake)
  • grease and flour your cake pans properly and set aside
  • in a large bowl add flour, spices, salt and baking powder. whisk well until combined. set aside until ready to be used
  • break eggs in another large bowl. add in the lime peel and whisk lightly. all the lime peel to remain in the whisked eggs until you are ready to use it. set aside
  • using a hand mixer, add softened margarine to bowl and mix for a couple seconds before adding the sugar.
  • once sugar has been added, beat until light and fluffy or pale in colour (roughly 3-5 minutes). next add the essences, lime juice if using and eggs adding some at a time and whisk until combined.
  • be sure to beat well after each addition of the eggs.
  • next add the fruits and mix well. add in your flour mixture and mix just until combined.
  • using a spatula, scrape the sides and mix a bit. next add in the dash of angostura bitters and your browning. fold in well.
  • pour batter into cake pans, distributing equally. give it a few taps to get rid of any air bubbles.
  • place in preheated oven and bake for about 2 1/2 hours. once baked remove from oven and pour alcohol over it while hot.
  • allow to cool completely in pans.
  • to cure until Christmas, simple keep pouring alcohol or wine over it (helps to maintain its moisture as well)
  • slice and serve
  • happy eating!

This delicious ” Swedish Tea Ring Bread“, is the perfect addition to your Christmas breakfast menu. A little on the sweet side, It’s wonderful flavour will have you going back for seconds. Don’t be afraid to make this recipe your own.

Ingredients

For the dough

  • 2 cups all purpose or regular flour
  • 6 tablespoons milk
  • 1/4 – 1/2 cup sugar (this depends on your level of sweetness desired)
  • 1/4 cup margarine
  • 1/4 cup water
  • 1/2 an egg yolk
  • 1 tablespoon yeast ( i used less as i am trying to not use too much for health reasons)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

For the filling

  • 1/4 cup raisins
  • 1/4 cup dried pineapple cubes
  • 1/4 cup dried mango cubes
  • 1/4 cup dried cranberry
  • 1/4 cup dried pawpaw
  • 1/4 cup walnuts, patched and chopped into small pieces (this is for the crunch)
  • 1 tablespoon cinnamon
  • 1/8 teaspoon ground nutmeg (optional)
  • 3 ounces margarine, melted
  • 1/4 – 1/2 cup brown sugar
  • 1 – 11/2 teaspoon vanilla essence

Instructions

  • in a large bowl, add flour, yeast, and salt. mix thoroughly and set aside.
  • in a skillet on low heat, add milk and margarine. allow the margarine to melt. next add in the sugar and stir until dissolved.
  • add in egg yolk, water and essence and stir thoroughly until combined. remove mixture from heat and allow to cool until warm.
  • add the wet ingredients to the dry mixture and form a rough dough. place on a floured counter top and knead for 3 minutes until smooth.
  • place in a greased bowl and sided aside in a warm corner of your kitchen to proof (about 1 hour).
  • while the dough is proofing, make the filling.
  • add the dried fruits, cinnamon, nutmeg and sugar in a large bowl. mix well. next add the vanilla and melted butter and mix well. set aside until ready to use.
  • once the dough has proofed, place on floured countertop and using a rolling pin, roll into a rectangular shape.
  • place filling on the dough, careful not to go too close to the edge for easy forming of the ring.
  • next roll the dough from one end to the other. be sure to seal the end with some water or butter.
  • next carefully form into a circle, tucking in the edges one into the other and sealing with some water.
  • allow to sit for about 30 minutes before making your incisions (helps with cutting easily once cooled). egg wash and place in a preheated oven at 350 degrees f.
  • bake for 30-35 minutes or until nice and golden brown.
  • allow to cool completely before cutting.
  • a simple glaze can be made to place on the top for decorative purposes.
  • enjoy!

Instructions

  • preheat oven to 350 degrees f
  • in a large bowl, sift flour, add in spices, salt, baking powder and corn flour and mix well. set aside until ready for use.
  • in a stand mixer, add softened butter and sugar. mix until light and fluffy (about 5 minutes). once creamed, add in eggs and mix. next go in with vanilla extract and milk and mix well. add in dry ingredients mix. and beat until combined (do not over mix)
  • lightly grease and flour a loaf pan and pour in batter. place in preheated oven and bake for about 30-35 minutes or until golden brown.
  • remove from oven. allow to cool in pan for 10 minutes. then remove and place on a rack to cool completely

Ingredients

  • 1/2 cup (1 stick of margarine or butter), softened
  • 1 cup plain flour
  • 3/4 cups brown sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon grated nutmeg
  • 1 teaspoon cinnamon powder
  • a pinch of salt to help balance flavour (optional)
  • 1 cup blended fruit mix
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon mixed essence
  • 1 teaspoon lime zest / lime juice
  • a dash or 2 of angostura bitters

Instructions

  • preheat oven to 250 degrees F
  • in a stand mixer or a hand mixer, add butter and flour and cream until light and fluffy (medium high speed)
  • once sugar and butter are creamed, add in eggs one at a time and mix until combined. next, add in vanilla extract or essence, mixed essence and lime zest or lime juice if using. mix just until combined.
  • next add in blended fruits and mix in. add in angostura butters and mix. set aside until ready to use.
  • in another large bowl, add flour, baking powder, salt, cinnamon powder and grated nutmeg (all spice or mixed spice can be added as well) combine well.
  • add dry to wet ingredients a little at time (i mixed it in by hand) and mix until just combined. place cake batter into a greased and flour cake pan and place in preheated oven to bake until a skewer inserted in the middle comes out clean. allow to cool in pan for about 10-15 minutes before removing to place on a rack to cool completely.
  • cut a slice and enjoy!

Things to note:

  • this recipe makes 1 medium sized cake (1/4 pound) and can be doubled or tripled to your liking
  • more fruits can be added to get a more pudding like consistency
  • browning can be added
  • be sure to check your cake often so as to not burn it (each oven is different)

  • 1 1/2 cups plain flour (plus 1 cup on reserve)

  • 1 teaspoon yeast
  • 1/4 teaspoon baking powder (optional)

  • 1/2 cup plus 2 tablespoons coconut milk, warm
  • 1/4 – 1/2 cup grated coconut
  • 2 tablespoons coconut oil

Instructions

  • preheat oven to 350 degrees F
  • in a stand mixer place flour, sugar, yeast, grated coconut and baking powder. mix until combined. while mixer is on low speed , add oil and coconut milk
  • increase speed between2 and 4 and allow to knead for 8- 10 minutes
  • place dough in lightly greased bowl and place in a warm area of your kitchen to double in size
  • once risen, punch down the middle to release air and return to mixer to knead for a further 3 minutes
  • form into bread dough and place in loaf pan. allow to sit in warm area for another 45 minutes or until doubled in size. place in preheated oven to bake for 45-50 minutes depending on oven used. remove from oven once baked and allow to cool for 10 minutes in pan. then place on a rack to cool completely before cutting
  • enjoy!

Fruits Preparation for Christmas is one of the most important step in a Caribbean household. Usually soaked in alcohol and cake wine, the flavours are divine.

Ingredients

  • 11/2 cups raisins
  • 11/2 cups currants
  • 1 cup cherries
  • 1 cup pitted prunes
  • 2 cups cake wine
  • 2 tablespoons alcohol (can be omitted or more can be added based on liking)

Instructions

  • to a blender, add in all fruits, wine and alcohol. blend to liking. pour into a tightly fitted jar and store in fridge until ready for use.

*side note: you can occasionally add alcohol throughout the length of time the fruits are soaking until use (that is if you like your fruits with more alcohol)

Ingredients

For the dough

  • 1/4 cup plus 2 tablespoons milk
  • 1/4 cup white or brown sugar
  • -1 teaspoon yeast (more can be used depending on choice)
  • 1/2 teaspoon salt
  • 1/4 cup butter
  • 1/4 cup water (on reserve in case more liquid is needed)
  • 1 small egg yolk
  • 2 cups flour
  • 1 teaspoon vanilla extract or essence
  • 1-2 tablespoons melted butter (to brush on dough before applying cinnamon mixture)
  • 1 egg (for egg washing the cinnamon rolls)

For the cinnamon mixture

  • 11/2 tablespoons of cinnamon powder
  • 2 tablespoons sugar
  • 1/4 – 1/2 teaspoons grated nutmeg (optional)

For Icing Glaze

  • 11/2 cups icing sugar (may use more or less depending on how much you want and the amount of cinnamon rolls made)
  • 1/2 tablespoon almond or vanilla extract
  • 1 teaspoon milk or water (may use more or less)

Instructions

  • preheat oven to 350 degrees F
  • in a saucepan on medium low heat, add milk, margarine/butter and sugar. mix until the margarine and sugar has dissolved. remove from and set aside to com to lukewarm temperature
  • meanwhile, in a large bowl or a stand mixer, add the flour, yeast and salt. mix until combined and set aside
  • once to milk mixture has come to lukewarm temperature, add in the egg yolk and vanilla extract. mix until combined. add the wet ingredients to the dry ingredients and mix until smooth (about 6-8 mins) add in reserved water as need. place dough in a lightly greased bowl and allow to sit in a warm area of your kitchen to proof until doubled in size.
  • while dough is proofing, melt butter or margarine and set aside. move on to the cinnamon mixture; combine all ingredients and set aside.
  • once the dough has proofed, punch in the middle to remove the air and gases. place on a lightly floured counter top and using a rolling pin, roll into a rectangular shape. using a pastry brush, brush the melted margarine all over the dough and the cinnamon mixture
  • gentle roll the dough into a log. using a bit of water, seal any edges that might be loose or tuck them in. using a kitchen scissors or a sharp knife, mark out and cut dough into desired shapes. place cinnamon rolls into a lightly greased baking sheet. allow to proof and brush some egg wash over the tops to give it a nice golden brown colour when baking (i added the egg wash before proofing). place in preheated oven and allow to bake for 20-30 minutes depending on your oven.
  • once the rolls are baked, remove from oven and add sweet water to the top while hot( this is optional) this helps to give the dough a glossy look. allow to cool completely
  • while rolls are cooling, add icing sugar, vanilla extract and mix, add water as needed. once the rolls are cooled, drizzle the glaze all over as desired and serve
  • do enjoy!

Ingredients:

Pie Crust:

  • 11/2 sticks very cold butter
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1/3 very cold shortening
  • 1/2 cup ice water

Instructions:

  • place dry ingredients in a food processor and mix for a couple seconds (or use a spatula to mix dry ingredients in a large bowl)
  • go in with fats (shortening and butter) and pulse (6-8 times) while slowly adding ice cold water (if not using a processor, cut in the fats with a knife or a fat cutter). mixture should be crumbly. do not over mix
  • place in a large bowl and form into a smooth dough (work quickly to avoid the fats from falling apart and melting.) do not over mix
  • place smooth dough in plastic wrap and place in freezer for 15 minutes to rest

the Filling

  • 12 slices bacon (or sausage)
  • 3 cups shredded cheese
  • 2 medium minced onion
  • 5 eggs, beaten
  • 250ml heavy whipping cream
  • 2 teaspoons salt
  • 1 tablespoon sugar
  • 2 cups baby spinach (or callaloo; simply steam some callaloo with a bit of salt and garlic and little water until cooked. allow to cool before using)
  • 1 cup grated carrots
  • 2 tablespoons pimento(optional)
  • 2 tablespoons garlic

Instructions:

  • preheat oven to 400 degrees F
  • place bacon or sausage in a skillet on medium heat and fry until crisp (i didnt fry my sausages). drain on paper towel, then chop coarsely. set aside until ready for use
  • next, whisk egg then in a large bowl add the whipping cream, garlic, callaloo, salt, sugar and other ingredients. mix until combined
  • after 15 mins place pie crust dough on a floured counter top and roll out 1/2 inch in thickness. place in tart pan or mini muffin pans and cut into shape.( if using immediately, place filling in the pie crust shells and bake in a preheated oven of 400 degrees (depending on the oven) for a more structured and crispier pie crust place in freezer over night and use the next day)
  • sprinkle bacon/sausage, onion and cheese into pastry shell. next add the filling. place in preheated oven for 20-30 minutes depending on oven
  • once baked, remove from oven, allow to cool before removing from pans
  • enjoy!

  • 1/2 cup (or more based on preference) raisins/black currants
  • 2-3 tblspns + 2tsps coconut or evaporated milk
  • 1-2 tblspn grated ginger
  • 1 tsp baking powder

Instructions

  • preheat oven at 350 degrees F
  • to a large mixing bowl, add room temperature butter or margarine and sugar. mix well by hand using a spatula or a hand mixer (3-5 mins )
  • next add in ginger, ground cinnamon, grated nutmeg and mixed or vanilla essence
  • add in flour and baking powder. mix well. you will notice a crumbly texture
  • add in coconut/evaporated milk, grated coconut and raisins/black currants. mix well. the batter would be stiff. Don’t panic that’s how it’s suppose to be
  • once done using an ice cream scope or spoon place in a lightly greased muffin pan
  • place in preheated oven to bake for about 45-50 mins (depending on your oven) until nice and golden brown
  • remove pan from oven. allow to cool slightly in pan. then remove from pan and place on a cooling rack to cool completely
  • enjoy!

Ingredients

  • 4-5 cups plain flour
  • 1 cup whole wheat flour (optional)
  • 4 tablespoons brown sugar
  • 2 teaspoons yeast
  • 1 cup warm water (plus 1/4 cup for the blending of the green banana)
  • 3 medium sized slightly ripe green banana/green fig cooked
  • 1/4 cup olive oil or coconut oil
  • 2 tablespoons shortening, margarine or butter

Instructions

  • preheat oven at 350 degrees F
  • place the 1/4 cup of water and green banana/fig in a blender and blend for about 30 seconds
  • to a mixer start off by adding 3 cups of plain flour, whole wheat flour, sugar, yeast, shortening and the blended bananas. on low speed, mix until well combined
  • next add in the olive oil
  • add in the rest of the water and allow bread to form a dough (about 8 minutes if using a kitchenaid)
  • add the additional reserved flour as needed
  • once finished, place dough in a lightly greased bowl and allow it to rest for about an hour or until it has doubled in size
  • once risen, punch in the middle and return to the mixer to mix for an additional 3 minutes. once down place on a floured counter and form into two loaves. place in pan and allow to sit for another 45 mins until doubled in size
  • next place in preheated oven for about 35-40 mins (more or less depending on your oven make) or until golden brown
  • once finished remove from oven and allow to sit in the pans for about 5 mins and then remove from pan, place on a cooling rack to cool completely
  • serve with any side of your choice(can be served hot as well)
  • enjoy!
