Sorrel Fruit Cake

Ingredients

  • 3 2/3 cups plain flour
  • 3/4 – 1 cup sugar (depending on sweet level preferred)
  • 6 eggs
  • 227g margarine or butter (2 sticks of butter)
  • 1 tablespoon baking powder
  • 1 tablespoon cinnamon powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract or essence
  • 1/2 teaspoon almond extract or essence
  • 2 cups freshly brewed sorrel drink
  • 1/2 teaspoon freshly grated nutmeg
  • 1 teaspoon lime, lemon or orange zest ( or 1/2 teaspoon lime juice)
  • 2-21/2 cups soaked Christmas fruits (use more or less fruits as desired)
  • 1 teaspoon all spice or mixed spice (optional)
  • red food coloring (optional)

N.B. all ingredients must be at room temperature as it’s much easier to work with

Instructions:

  • in a stand mixer or using a hand mixer, add butter/margarine and sugar. cream until light and fluffy. (half way through the creaming process, preheat oven to 270 degrees F.) (be sure to scrape down the sides during the creaming process to ensure all the butter and sugar is well incorporated together
  • while the creaming process is happening, move on to the eggs and add in vanilla and almond extract along with lime zest and whisk.
  • add eggs some at a time to the butter and sugar mixture. ensure that it’s combined well after each addition. once finished set aside
  • next in a bowl, mix the flour, cinnamon powder, salt, baking powder and grated nutmeg and mix until combined. set aside until ready for using
  • in a large bowl, add sorrel drink and creamed butter mixture. mix until combined . add in soaked fruits and mix
  • add in dry ingredients a little at a time and mix until just combined. add in red food coloring if using and mix
  • grease and flour cake pans using and pour batter evenly into each. place in preheated oven and bake until a skewer inserted in the middle comes out clean.
  • add wine mixture over cake while it’s hot if doing that, to allow the mixture sip into the cake. allow to cool in pans (room temperature) before removing and cut.
