Cinnamon Rolls

Ingredients

For the dough

  • 1/4 cup plus 2 tablespoons milk
  • 1/4 cup white or brown sugar
  • -1 teaspoon yeast (more can be used depending on choice)
  • 1/2 teaspoon salt
  • 1/4 cup butter
  • 1/4 cup water (on reserve in case more liquid is needed)
  • 1 small egg yolk
  • 2 cups flour
  • 1 teaspoon vanilla extract or essence
  • 1-2 tablespoons melted butter (to brush on dough before applying cinnamon mixture)
  • 1 egg (for egg washing the cinnamon rolls)

For the cinnamon mixture

  • 11/2 tablespoons of cinnamon powder
  • 2 tablespoons sugar
  • 1/4 – 1/2 teaspoons grated nutmeg (optional)

For Icing Glaze

  • 11/2 cups icing sugar (may use more or less depending on how much you want and the amount of cinnamon rolls made)
  • 1/2 tablespoon almond or vanilla extract
  • 1 teaspoon milk or water (may use more or less)

Instructions

  • preheat oven to 350 degrees F
  • in a saucepan on medium low heat, add milk, margarine/butter and sugar. mix until the margarine and sugar has dissolved. remove from and set aside to com to lukewarm temperature
  • meanwhile, in a large bowl or a stand mixer, add the flour, yeast and salt. mix until combined and set aside
  • once to milk mixture has come to lukewarm temperature, add in the egg yolk and vanilla extract. mix until combined. add the wet ingredients to the dry ingredients and mix until smooth (about 6-8 mins) add in reserved water as need. place dough in a lightly greased bowl and allow to sit in a warm area of your kitchen to proof until doubled in size.
  • while dough is proofing, melt butter or margarine and set aside. move on to the cinnamon mixture; combine all ingredients and set aside.
  • once the dough has proofed, punch in the middle to remove the air and gases. place on a lightly floured counter top and using a rolling pin, roll into a rectangular shape. using a pastry brush, brush the melted margarine all over the dough and the cinnamon mixture
  • gentle roll the dough into a log. using a bit of water, seal any edges that might be loose or tuck them in. using a kitchen scissors or a sharp knife, mark out and cut dough into desired shapes. place cinnamon rolls into a lightly greased baking sheet. allow to proof and brush some egg wash over the tops to give it a nice golden brown colour when baking (i added the egg wash before proofing). place in preheated oven and allow to bake for 20-30 minutes depending on your oven.
  • once the rolls are baked, remove from oven and add sweet water to the top while hot( this is optional) this helps to give the dough a glossy look. allow to cool completely
  • while rolls are cooling, add icing sugar, vanilla extract and mix, add water as needed. once the rolls are cooled, drizzle the glaze all over as desired and serve
