Ingredients

  • 1 lb salted mackerel, washed and boiled (bones removed and shredded)
  • 6 tomatoes, chopped
  • 2 medium sized or 1 large yellow onion, sliced
  • 1 large sweet pepper, sliced
  • chado beni, sliced
  • 3 pimento peppers, sliced
  • 3 garlic cloves, sliced
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons coconut oil or any oil of choice
  • 4 twigs of green onions or chives, sliced
  • additional seasonings can be added based on preference

For the corn dumplings

  • 11/2 cups regular all purpose flour
  • 1 teaspoon sugar (optional)
  • 1 cup corn meal/flour plus more if needed
  • 1/4 teaspoon salt
  • 1/4 cup water

Instructions

  • on medium low heat, add oil to pan and seasonings (don’t add the tomatoes just yet). allow to sautee for a couple minutes.
  • next add in tomatoes and mix well. sautee for a couple minutes again. add the mackerel and gently stir into the tomato seasoning mixture. add any additional seasonings of choice. lower the heat and allow to simmer for a few more minutes (no more than 5 minutes). remove from heat and set aside.
  • mix dough for corn dumplings. in a pot with boiling water, add in the dumplings and cook until done (between 10 to 15 minutes).
