Grenadian Good Friday Lunch

Ingredients

  • ripe plantains
  • sweet potatoes
  • yams
  • green fig/banana
  • dasheen
  • mackerel, smoked herring or salted fish (1 lb) green seasoning ( 1 tablespoon)
  • 2 medium sized bell pepper
  • 3 pimento peppers
  • salt to taste
  • cayenne or black pepper to taste
  • 1 medium onion, chopped finely
  • 5-6 medium sized tomatoes, sliced
  • 3 garlic cloves
  • 3-4 tablespoons coconut oil
  • 1-2 cups flour
  • 2 teaspoons sugar
  • 2 tablespoons or more corn flour or meal
  • 2 teaspoons vinegar

Instructions

  • wash and peel provisions. add to a pot with water and add salt. bring to a bowl. next in a large bowl, add flour, sugar, corn flour/meal, mix until combined. add water as need and knead until a stiff smooth dough is formed. set aside until ready to use.
  • once provisions are boiling, make and add in dumplings. once cooked, remove from heat and drain out water
  • while provisions and dumplings are cooking, next wash smoked herring and add to a pot with water and a little vinegar and boil for about 10 minutes. remove from heat, drain and add cold water to bring it to room temperature. remove bones and set smoked herrings aside.
  • in the meantime cut up seasonings and tomatoes. in a large sauce pan, add in oil and seasonings. mix until combined. allow to sautee from a couple minutes. next add in tomatoes. sautee for 1 minute and add in smoked herrings and stir until combined. add in pepper and salt. mix well. allow to sautee for a bout 3 more minutes and remove from heat
  • serve and enjoy!!

N.B A green salad can be added to the plate as well as avocado.
