Grenadian Fishcake Updated

Ingredients

  • 1 lb salt fish (there about) washed, boiled and cleaned
  • 2 medium onions, chopped
  • 3 garlic cloves, diced
  • 3 pimento peppers, chopped
  • 1 large bell pepper, chopped
  • 1 teaspoon turmeric (optional)
  • 1 teaspoon (more or less depending on heat desire) cayenne, black pepper or pepper sauce
  • salt to taste
  • 7 leaves or more chopped spinach
  • 1 cup water (more or less depending on desired texture)
  • 1/2- 1 cup flour
  • 1 tablespoon green seasoning
  • oil for frying

Instructions

  • in a large bowl, add salt fish, onion, garlic, green seasoning, pimento and bell peppers, and mix well.
  • next, add in turmeric and mix until well combined. add in flour some at time, followed by water until desired consistency is achieved. next add in spinach, salt and cayenne pepper and mix well.
  • allow to sit for about 10-15 minutes to allow the flavours to develop properly throughout the batter.
  • in a large skillet, add oil and allow to heat up on medium high heat. place cakes in spoonful into the heated oil and allow to cook until golden brown (be sure to keep an eye on the oil as it can become hot really quickly)
  • once fried, served hot with any condiments of choice or served with some delicious coconut bake.
