Ingredients

  • 1 small breadfruit (roughly 1 lb),washed, peeled and gutted
  • 1 medium onion, finely chopped
  • 3 pimento peppers, finely diced
  • 3 garlic cloves, finely chopped
  • 3 chado beni twigs, finely minced
  • fresh thyme
  • chives, finely chopped (i used a few)
  • fresh parsley, chopped
  • salt to taste
  • cayenne or hot pepper sauce (1/4 teaspoon or more )
  • 1 egg
  • 1/2 cup breadcrumbs
  • oil for frying

Instructions

  • boil breadfruit in salted water until soft. drain and place while hot in a large heat prove bowl.
  • crush breadfruit while hot (it’s much easier)
  • add in seasonings, mix well until combined and let sit for a bit to cool before adding the egg (you don’t want your egg to cook)
  • once egg has been added, mix thoroughly and form into round shapes (big or small) and set aside
  • coat the breadfruit balls in the breadcrumb and set aside
  • place a large skillet with oil on medium low heat. allow the oil to heat well. next place the breadfruit balls in and be careful not to add too much at the same time. fry the balls until golden brown (about 4-5 minutes per side)
  • once finished, remove from oil and serve by itself or with any condiments of choice.

Ingredients

  • 2 lbs chicken part of choice, cleaned and seasoned
  • 1 large carrot, medium sliced
  • 2 bay leaves
  • 1 medium cinnamon stick
  • rosemary
  • thyme
  • chives
  • chado benny
  • 1 medium sized onion chopped
  • 4 garlic cloves chopped
  • salt to taste
  • 1 tablespoon green seasoning
  • 1 tablespoon oil for making the browning
  • 1/4 cup sugar for making the browning

Instructions

  • in a large skillet on medium high heat, add oil and sugar. allow the sugar to burn until a golden brown colour is achieved. be sure to keep a close eye on it as you don’t want it to burn too much (will be bitter)
  • next add in seasoned chicken along with spices and additional seasonings and mix quickly and thoroughly. cover and allow to steam for a 5 minutes or so before adding water
  • allow to cook. be sure to taste for flavour during the cooking process
  • once cooked, serve with any side of choice with a salad
    • enjoy

Ingredients

  • 2 cups plain flour
  • 1/2 – 3/4 cups sugar (white or brown or a mixture of both)
  • 2 medium sized over ripe plantain, blended
  • 2 large eggs
  • 1/2 cup margarine, melted
  • 2 tablespoons coconut oil or any flavourless oil of choice
  • 2 teaspoons cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/4 freshly grated nutmeg
  • 1/2 teaspoon tonka bean
  • 1 teaspoon baking powder
  • 1/4 – 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla essence
  • 1/2 teaspoon lime juice or lime peel
  • 1/4 cup walnuts chopped + more for the top

Instructions

  • preheat oven to 350 degrees f
  • in a large bowl, add the flour and spices along with the baking powder, baking soda and salt. give it a really good mix until combined.
  • set aside until ready for use.
  • in another bowl, add eggs, vanilla essence and lime juice. mix for a few seconds until combined. next add in sugar and oil and mix until well incorporated into the egg mixture
  • add in the pureed plantains and mix until combined.
  • next add in the dry mixture and mid just until combined. add in the walnut and fold in with a spatula just until mixed (do not over mix)
  • add to lined muffin pans and give a quick tap to level the top. next add some chopped walnuts and place in preheated oven to bake.
  • bake for roughly 25-30 minutes or until a skewer inserted comes out clean.
  • remove from oven and allow to cool in pan for 10 minutes before placing on a rack to cool completely
  • enjoy!

Grenadian Custard Snow Ice is the perfect frozen snack which is usually consumed on a hot summer day in the Caribbean. Grenadian Custard Snow Ice is usually made with ingredients found right in your cupboard. Try it.

Ingredients

  • 1 pack custard powder
  • 6-7 cups of water
  • 2 tins condensed milk
  • 2 bay leaves
  • cinnamon stick
  • 1/2 teaspoon grated nutmeg
  • a pinch of salt
  • 3/4 cup very cold water
  • plastic bags for snow ice

Instructions

  • in a large skillet add water and spices along with salt and allow to boil.
  • in the meantime, add custard powder to a bowl and add the very cold water. mix until a smooth textured paste (a bit runny) is formed. set aside until ready for use
  • once the water is boiling, set heat to low. slowly add the custard mixture to the hot water, mixing immediately to avoid any lumps. allow to cook (7-8 minutes)
  • remove from heat and add in sweetener. pour strain mixture into a large bowl and allow to come to room temperature before bagging and placing in freezer.
  • snow ice should be set at least 6 hours before enjoying or overnight is best.
  • enjoy!

Ingredients

  • 2 medium sized sweet potatoes, chopped in cubes
  • 3 small eddoes, chopped in cubes
  • 1 lb fish of choice, seasoned (overnight preferably)
  • 4 pimento peppers, minced
  • 2 onions, chopped
  • 4 garlic cloves, chopped finely
  • 1 scotch bonnet pepper
  • chives, finely chopped
  • 4 big leaf thyme (poor man pork)
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon oil
  • 5 okra, washed and chopped (can be left whole as well)
  • 1 large carrot, chopped
  • salt to taste
  • 1 tablespoon green seasoning plus more for added flavour
  • add water as needed
  • 1 teaspoon dried parsley
  • 6 tablespoons flour
  • 3 tablespoons corn meal/flour
  • 1/4 water for dumpling
  • 1 teaspoon sugar, for added flavour in dumplings

Instructions

  • to a skillet on medium low heat, add oil, green seasoning, pimento pepper, onions and garlic. mix together, allow to sautee for about a couple of minutes
  • next add in okra and carrot. mix well. next add in 2 cups of water and bring to a boil. add in provision of choice and allow to boil. while that is happening, move on to making the dumplings (optional).
  • in a large bowl, add sugar and water and mix. next add in the corn meal and then the flour. mix into a stiff dough.
  • once provision is boiling, add in the dumplings, salt, cayenne pepper and add water as needed. allow to cook.
  • next add in the fish and the scotch bonnet and allow to cook for another 10 minutes. be sure to keep a close eye on your broth.
  • once finished, remove from heat and serve hot

N.B

  • Dumplings are optional
  • any ground provisions can be added

  • ripe plantains
  • sweet potatoes
  • yams
  • green fig/banana
  • dasheen
  • mackerel, smoked herring or salted fish (1 lb) green seasoning ( 1 tablespoon)
  • 2 medium sized bell pepper
  • 3 pimento peppers
  • salt to taste
  • cayenne or black pepper to taste
  • 1 medium onion, chopped finely
  • 5-6 medium sized tomatoes, sliced
  • 3 garlic cloves
  • 3-4 tablespoons coconut oil
  • 1-2 cups flour
  • 2 teaspoons sugar
  • 2 tablespoons or more corn flour or meal
  • 2 teaspoons vinegar

Instructions

  • wash and peel provisions. add to a pot with water and add salt. bring to a bowl. next in a large bowl, add flour, sugar, corn flour/meal, mix until combined. add water as need and knead until a stiff smooth dough is formed. set aside until ready to use.
  • once provisions are boiling, make and add in dumplings. once cooked, remove from heat and drain out water
  • while provisions and dumplings are cooking, next wash smoked herring and add to a pot with water and a little vinegar and boil for about 10 minutes. remove from heat, drain and add cold water to bring it to room temperature. remove bones and set smoked herrings aside.
  • in the meantime cut up seasonings and tomatoes. in a large sauce pan, add in oil and seasonings. mix until combined. allow to sautee from a couple minutes. next add in tomatoes. sautee for 1 minute and add in smoked herrings and stir until combined. add in pepper and salt. mix well. allow to sautee for a bout 3 more minutes and remove from heat
  • serve and enjoy!!

N.B A green salad can be added to the plate as well as avocado.
