Breadfruit Pie (Grenadian Style)

Ingredients

  • 1 medium sized breadfruit
  • 3 tablespoons flour
  • 11/2 cups carnation evaporated milk
  • 1 tablespoon mustard powder or mustard oil
  • 1/4 teaspoon grated nutmeg
  • salt
  • 5 tablespoons butter or margarine plus extra for mashing the breadfruit
  • 1 medium onion, finely diced
  • 3 cloves garlic, finely diced
  • 1 cup grated cheese (i used cheddar cheese, any cheese of choice can be used)
  • 2-3 tablespoons parsley, chopped finely
  • 1/4 teaspoon cayenne pepper (black pepper can be used as well)

Instructions

  • preheat oven to 350 degrees f
  • peel and wash breadfruit. next, bread fruit in pot with water and add salt to it. allow to cook for about 15-20 minutes. test with a fork (the old fashion mama used to test her provisions) to make sure it’s cooked (do not over cook). remove from heat and drain out the water, mash the bread fruit while hot with a bit of butter and set aside until ready for use
  • in a sauce pan, add butter or margarine and allow to melt on low heat. next add in flour and raise the heat to medium and whisk until cooked (about 4-5 minutes). next add in milk, onion, garlic, parsley, grated nutmeg, cayenne pepper and salt and 3/4 of the grated cheese (reserve the rest for the topping of the pie). whisk until combined . if batter is a bit on the thick side add a bit more milk
  • to assemble the pie: add mashed breadfruit to a pie dish and pour the cheese sauce all over and smooth out (not to worry the sauce will trickle between the breadfruit). place in preheated oven and bake for about 30 minutes (depending on your oven). once nice and golden brown in colour, remove from oven and allow to cool completely before slicing through.
  • serve with a green salad or as part of your sunday dinner
