It’s Christmas time! And that means chocolate and malt beverages are on the menu list. Talking about malt, this delicious recipe Chocolate Malta Cake is the perfect dessert to have for your Christmas gathering. Ingredients

  • 1/2 cup margarine or butter, cubed
  • 1 250ml malta
  • 2 cups all purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 11/2 cups sugar (1/2 more if desire)
  • 2/3 cup sour cream
  • 2 eggs, beaten
  • 11/2 teaspoon baking soda ( i used bob mill’s gluten free baking soda)
  • 3 teaspoons vanilla extract/essence
  • a pinch of salt to balance of flavours

For the Cream cheese glaze

  • 4 ounces cream cheese softened
  • 3/4 cups confectioner’s sugar/ icing sugar
  • 2-3 tablespoons milk

Instructions

  • preheat oven to 350 degrees f
  • in a bowl, mix the flour, salt and baking soda and set aside.
  • in a saucepan on medium low heat, add malta and butter. stir until margarine is melted.
  • remove from heat, next add in the cocoa powder and sugar. whisk until fully combined
  • transfer mixture to a large bowl. add sour cream, eggs and vanilla extract. mix well.
  • fold in flour mixture. once mixed, pour mixture into a 10″ bundt pan and tap a few times to get rid of air bubbles
  • place in preheated oven to bake (about 45-50 mins) or until a skewer inserted comes out clean.
  • once baked, remove from oven and allow to cool in pan for about 15 minutes. then remove and place on rack to cool completely
  • while cake is cooling, place softened butter and cream cheese in a stand mixer and beat for a couple of minutes until both are smooth in texture.
  • next add the icing sugar and mix well, adding the milk in tablespoons until the desired texture is reached.
  • pour the glaze all over the cooled cake. slice and serve

Ingredients

  • 1 cup all purpose flour
  • 1 cup yellow corn meal
  • 3/4 cup brown sugar
  • 11/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon pumpkin spice
  • 1/4 teaspoon grated nutmeg
  • 3 large eggs
  • 1/2 cup coconut oil or vegetable oil
  • 2 tablespoons milk
  • 3/4 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped walnuts or pecans (optional)

Ingredients

  • preheat oven to 375 degrees f
  • in a large bowl mix together flour, cornmeal, baking powder and soda and spices. set aside until ready for use
  • in another large mixing bowl, add oil and egg and whisk until combined. next add in the pumpkin puree, vanilla, milk, sugar and lime zest or juice.
  • mix well. add the dry ingredients to the wet and fold in gently to avoid having a tough muffin on hand.
  • next add in chopped walnuts.
  • line a 12 inch muffin pan and equally distribute the batter. place in preheated oven and bake until a skewer inserted in the middle comes out clean or bake for roughly 15 minutes (please keep an eye on the muffin)
  • once baked, remove from oven and allow to set in the pan for 10 minutes before removing and placing on a rack to cool completely.
  • serve with a bit of butter or honey on the top. enjoy

This delicious ” Swedish Tea Ring Bread“, is the perfect addition to your Christmas breakfast menu. A little on the sweet side, It’s wonderful flavour will have you going back for seconds. Don’t be afraid to make this recipe your own.

Ingredients

For the dough

  • 2 cups all purpose or regular flour
  • 6 tablespoons milk
  • 1/4 – 1/2 cup sugar (this depends on your level of sweetness desired)
  • 1/4 cup margarine
  • 1/4 cup water
  • 1/2 an egg yolk
  • 1 tablespoon yeast ( i used less as i am trying to not use too much for health reasons)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

For the filling

  • 1/4 cup raisins
  • 1/4 cup dried pineapple cubes
  • 1/4 cup dried mango cubes
  • 1/4 cup dried cranberry
  • 1/4 cup dried pawpaw
  • 1/4 cup walnuts, patched and chopped into small pieces (this is for the crunch)
  • 1 tablespoon cinnamon
  • 1/8 teaspoon ground nutmeg (optional)
  • 3 ounces margarine, melted
  • 1/4 – 1/2 cup brown sugar
  • 1 – 11/2 teaspoon vanilla essence

Instructions

  • in a large bowl, add flour, yeast, and salt. mix thoroughly and set aside.
  • in a skillet on low heat, add milk and margarine. allow the margarine to melt. next add in the sugar and stir until dissolved.
  • add in egg yolk, water and essence and stir thoroughly until combined. remove mixture from heat and allow to cool until warm.
  • add the wet ingredients to the dry mixture and form a rough dough. place on a floured counter top and knead for 3 minutes until smooth.
  • place in a greased bowl and sided aside in a warm corner of your kitchen to proof (about 1 hour).
  • while the dough is proofing, make the filling.
  • add the dried fruits, cinnamon, nutmeg and sugar in a large bowl. mix well. next add the vanilla and melted butter and mix well. set aside until ready to use.
  • once the dough has proofed, place on floured countertop and using a rolling pin, roll into a rectangular shape.
  • place filling on the dough, careful not to go too close to the edge for easy forming of the ring.
  • next roll the dough from one end to the other. be sure to seal the end with some water or butter.
  • next carefully form into a circle, tucking in the edges one into the other and sealing with some water.
  • allow to sit for about 30 minutes before making your incisions (helps with cutting easily once cooled). egg wash and place in a preheated oven at 350 degrees f.
  • bake for 30-35 minutes or until nice and golden brown.
  • allow to cool completely before cutting.
  • a simple glaze can be made to place on the top for decorative purposes.

  • 3 cups whole all purpose flour plus more in case it’s needed
  • 1 cup whole wheat flour
  • 21/2 teaspoons yeast
  • 3 tablespoons sugar
  • 12/3 cups warm water (more or less or needed)
  • 1/4 cup coconut oil or any oil of choice
  • 1/2 teaspoon salt
  • 2 tablespoons flax chia mix (optional)

Instructions

  • preheat oven to 350 degrees f
  • in a mixer bowl add flours, flax chia mix, yeast and salt. mix until combined. next add in coconut oil and mix.
  • slowly add warm water and knead until a soft dough is formed. (8 minutes)
  • place in lightly greased bowl and allow to double in size. punch in middle and return to mixer and knead for a further 3 minutes.
  • place on lightly floured surface and give a gentle knead and cut into 2 equal parts.
  • form dough into breads and place in lightly greased loaf pans. allow to double in size. place in preheated oven and bake until golden brown. 50-60 minutes or depending on oven used.
  • remove from oven and allow to cool 10 minutes in pans before transferring to a rack to cool completely.
  • slice and serve with anything on the side.

Who doesn’t love a good Banana Bread Updated recipe? This moist delicious banana bread updated, is the perfect addition to your special gatherings or is just perfect for a snack on your own.

Ingredients

  • 13/4 cups all purpose flour
  • 1/2 – 1 cup of sugar (depends on preference. like mine is a little less sweet)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup melted margarine or butter
  • 1/2 cup sour cream
  • 2 medium sized or 3 small ripe bananas
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon grated nutmeg
  • 1/8 teaspoon all spice
  • 1/4 teaspoon ground cloves
  • 2 eggs
  • 1 teaspoon white vinegar (lemon or lime juice is also an option)
  • 1 teaspoon vanilla extract or essence
  • 1/2 cup semi-sweet chocolate chip.

Instructions

  • preheat oven to 350 degrees f
  • add flour, spices, baking soda, baking powder and salt to a bowl and mix to combine.
  • in a large bowl, add melted butter and sugar and mixed until combined. next whisk in eggs, vanilla extract and vinegar. whisk until smooth.
  • next add in the flour mixture to the wet mixture and mix until smooth. next add in chocolate chip and sour cream and fold in until combined (do not over mix)
  • place batter in a lightly greased baking pan and place in preheated oven to bake for about 50-55 minutes or longer depending on oven used. ( keep a close eye on the bread)
  • once baked until golden brown, remove from oven and allow to cool in pan (15 minutes) before removing and placing on a rack to cool completely.
  • slice and serve
  • enjoy!

Ingredients

  • 3 2/3 cups plain flour
  • 3/4 – 1 cup sugar (depending on sweet level preferred)
  • 6 eggs
  • 227g margarine or butter (2 sticks of butter)
  • 1 tablespoon baking powder
  • 1 tablespoon cinnamon powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract or essence
  • 1/2 teaspoon almond extract or essence
  • 2 cups freshly brewed sorrel drink
  • 1/2 teaspoon freshly grated nutmeg
  • 1 teaspoon lime, lemon or orange zest ( or 1/2 teaspoon lime juice)
  • 2-21/2 cups soaked Christmas fruits (use more or less fruits as desired)
  • 1 teaspoon all spice or mixed spice (optional)
  • red food coloring (optional)

N.B. all ingredients must be at room temperature as it’s much easier to work with

Instructions:

  • in a stand mixer or using a hand mixer, add butter/margarine and sugar. cream until light and fluffy. (half way through the creaming process, preheat oven to 270 degrees F.) (be sure to scrape down the sides during the creaming process to ensure all the butter and sugar is well incorporated together
  • while the creaming process is happening, move on to the eggs and add in vanilla and almond extract along with lime zest and whisk.
  • add eggs some at a time to the butter and sugar mixture. ensure that it’s combined well after each addition. once finished set aside
  • next in a bowl, mix the flour, cinnamon powder, salt, baking powder and grated nutmeg and mix until combined. set aside until ready for using
  • in a large bowl, add sorrel drink and creamed butter mixture. mix until combined . add in soaked fruits and mix
  • add in dry ingredients a little at a time and mix until just combined. add in red food coloring if using and mix
  • grease and flour cake pans using and pour batter evenly into each. place in preheated oven and bake until a skewer inserted in the middle comes out clean.
  • add wine mixture over cake while it’s hot if doing that, to allow the mixture sip into the cake. allow to cool in pans (room temperature) before removing and cut.
  • enjoy!

  • 11/2 cups raisins
  • 11/2 cups currants
  • 1 cup cherries
  • 1 cup pitted prunes
  • 2 cups cake wine
  • 2 tablespoons alcohol (can be omitted or more can be added based on liking)

Instructions

  • to a blender, add in all fruits, wine and alcohol. blend to liking. pour into a tightly fitted jar and store in fridge until ready for use.

*side note: you can occasionally add alcohol throughout the length of time the fruits are soaking until use (that is if you like your fruits with more alcohol)

Ingredients

  • 1 cup flour
  • 1/2 cup sugar
  • 1 egg
  • 4 tablespoon margarine/butter/shortening
  • a pinch of salt (optional for if you used unsalted butter etc)
  • 2 cups grated coconut
  • 2 teaspoons cinnamon
  • 1/4 teaspoon grated nutmeg
  • 1/4 teaspoon grated tonka bean (optional)
  • 2 teaspoons vanilla essence/extract (or 1 teaspoon vanilla and 1 teaspoon mixed essence)
  • 1 teaspoon baking powder
  • 1-2 tablespoons grated ginger
  • 1/2 cup raisins

Ingredients

  • preheat oven at 350 degrees F
  • to a mixing bowl, add in flour and butter/margarine/shortening, and give it a really good mix
  • next add in sugar, spices and baking powder and mix until well combined
  • add in egg and essence (you can mix both or add them separately) and mix well. next add in grated coconut, raisins and ginger. mix well
  • using a spoon drop the coconuts unto a lightly greased baking sheet and place it in a preheated oven for about 10 or more mins depending on your oven
  • once done remove from oven and place on a cooling rack to cool completely
  • enjoy!
