Ingredients for the pie crust

  • 1 1/2 sticks very cold margarine or butter (12 tablespoons)
  • 3 cups all purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/3 cup (5 1/2 tablespoons very cold shortening
  • 1/2 cup ice water

Ingredients for the filling

  • 1/2 cup all purpose flour
  • 1/3 cup butter
  • 1 cup diced carrots
  • 1 cup diced irish potatoes (sweet potatoes can be used as well)
  • 1 cup diced onions
  • 2 cloves or garlic diced
  • diced celery
  • 1/2 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon fresh green seasoning
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup broccoli (optional)
  • 1/2 cup whipping cream
  • 2-4 cups cooked chicken breast, diced
  • 2 cups chicken broth
  • 1 cup frozen corn and peas

Instructions for the dough

  • in a food processor, add flour, sugar and salt and pulse until blended.
  • next add in margarine and shortening. pulse about 6-8 times until pea sized crumbles are formed.
  • with the food processor running, slowly add cold water and mix until a dough is formed. place on a lightly floured counter top and form into a ball. wrap the dough is plastic wrap and place in refrigerator to rest for 30 minutes.

Instructions for the filling

  • preheat oven to 400 degrees f
  • cut your pie crust dough in half and roll out 1 piece and place in a 9 inch pie pan and place in the freezer until ready for use. the other half set aside in the fridge.
  • in a large skillet on medium heat, add your margarine and allow to melt. once melted add in onion, garlic, celery, green seasoning, potato, carrots and broccoli. allow to sautee for 10 minutes.
  • next add in cayenne pepper, dried basil, dried thyme, salt and flour. mix until the veggies are well coated in the flour. slowly add in whipping cream and brother, making sure to mix to avoid lumps.
  • once thoroughly mixed, allow to simmer for 10 more minutes making sure to occasionally stir.
  • turn of heat once done and place in prepared pie pan.
  • roll out the 2 half of the pie pastry dough and place it on the top of the filling making sure to pinch the edges to seal it in.
  • make an incision in the middle and place in preheated oven to bake for 50-60 minutes or until golden brown.
  • once baked, remove from oven and allow cool completely or until slightly warm before cutting.

Who doesn’t love a good ole Lasagna especially when it’s cheesy and you get to have it as part of your Sunday lunch? This recipe is simply easy with a Grenadian twist to it. Enjoy!

Ingredients

  • 1 pack lasagna pasta
  • 2 lbs minced beef
  • 1 396 grams or 14 oz ragu sauce
  • 1/2 bottle (375ml) tomato paste
  • 2 medium sized onions chopped
  • 5 garlic cloves, chopped
  • 1 large bell pepper, chopped
  • 4 pimento peppers, chopped
  • salt to taste
  • fresh basil chopped (i went based on my taste)
  • 4 chado beni chopped
  • 1 twig of fresh thyme
  • 1 or mor cup of water or wine (add liquid as needed)
  • 1 teaspoon pepper flakes
  • 1 teaspoon cayenne or black pepper
  • a pinch of sugar for balancing all the flavours
  • 1 teaspoon dried parsley
  • 2 tablespoons oil for sautéing seasonings

For the sour cream sauce

  • 1 or more cup of gouda or any cheese of cheese grated
  • 1 cup mexican 4 cheese blend
  • 2 8 ounces sour cream
  • basil chopped ( i added based on my preference)

Instructions

  • preheat oven to 300 degrees f
  • in a large skillet on medium low heat add oil and heat up. next add in seasonings and satuee until translucent. add in minced meat, and cook until it turns to a greyish colour. if there is excess water drain it out or keep it. add in salt, pepper and mix well.
  • next add tomato paste and ragu sauce. mix well.
  • add a bit of water or wine and mix well.
  • allow to simmer on low heat for roughly 1 hour and 10 minutes

For the Sauce

  • while meat is cooking, make the sauce by add, the eggs, fresh basil and sour cream in a large bowl. mix until well combined. add in cheeses and mix again. set aside until ready for use.

  • once the meat is almost cooking (about 3/4 finished) go head and cook the pasta al dente (5 minutes). drain and set aside.
  • once the meat is finished, start assembling the pasta using a baking dish.
  • add a small amount of the meat mixture to the bottom.
  • and add some of the pasta, add white sauce and some of the meat mixture. keep adding in the order mentioned, ending with the white sauce on top and some cheese to top it off
  • bake for 45- 50 minutes
  • once baked allow to cool before cutting into. enjoy!

Who doesn’t love a good macaronie pie? This delicious Grenadian Macaroni Pie is a must have as part of our Sunday lunch. With little ingredients, it’s easy to prepare. Give it a try today.

Ingredients

  • 1 pack elbow macaroni
  • 1 tin evaporated milk
  • 31/2 cups grated cheese (any cheese of choice)
  • 2 eggs
  • 1 medium onion
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon butter
  • salt to taste

Instructions

  • in a boil with boiling water, add macaroni, stir and allow to cook based on packaging instructions
  • while macaroni is cooking preheat oven to 350 degrees f
  • grate the cheese set aside. chop onion and set aside.
  • in another bowl, whisk eggs until fluffy ‘
  • once macaroni is cooked, drain and allow to cool a bit before add the rest of the ingredients
  • add eggs, half of the cheese, pepper, butter and milk. mix until combined. pour into a pie or baking dish and allow to bake until desired colour
  • allow to cool before cutting and serving
  • enjoy!

This cornmeal recipe called Cou Cou Recipe is made in most Caribbean household. Be sure to give it a try.

Ingredients

  • 1 cup corn meal
  • 2-3 cups water
  • 1 cup coconut milk
  • 1 medium sized onion, chopped or grated
  • 2 garlic gloves, chopped or grated
  • 2 bell peppers
  • pimento peppers
  • 1/2-1 teaspoon salt
  • 1/4 teaspoon cayenne or black pepper
  • chives (optional)

Instructions

  • in a skillet on medium heat, add water (1 cup to start), coconut milk, seasonings, salt and cayenne pepper. mix well. next, add in corn meal and using a wooden spoon, stir continuously to avoid any lumps. add remaining water as needed. once the cornmeal starts to brown and stick to the sides, it’s done (consistency should be a bit runny)
  • pour mixture into a lightly greased pie dish and allow to sit until it sets before cutting and serve.
  • enjoy

Ingredients

  • 1 lb beef seasoned and pressured (reserve the stock to add into the soup)
  • ground provision of choice
  • dumplings
  • 2 small or 1 medium onion chopped
  • 4 garlic cloves minced
  • 2 medium sized bell peppers chopped
  • 3 pimento peppers chopped
  • 2 medium carrots cleaned and sliced
  • water
  • 1 tablespoon oil
  • salt to taste
  • green seasoning
  • 1 teaspoon cayenne or black pepper or scotch bonnet
  • a pinch of sugar to balance of flavours

Instructions

  • in a skillet, add oil, onion, garlic, green seasoning and peppers. mix well and allow to sautee for about 2 minutes. next add in beef and mix well. allow to sautee for about 2-3 minutes
  • next add in reserved beef stock from pressuring and add some water. next add in carrots, mix well and allow to come to a boil.
  • while pot is boiling, wash and peel ground provisions and cut into cubes and set aside. move on to making the dumplings and set aside
  • once pot has come to a boil, add in provisions and mix. allow to come to a boil, add dumplings and seasonings and sugar. be sure to check for more addition of water and salt etc
  • once cooked, remove from heat and serve with avocado on the side.
  • enjoy!

N.B Noodles can be added to this soup if it’s a preference.

  • 2 medium sized sweet potatoes, chopped in cubes
  • 3 small eddoes, chopped in cubes
  • 1 lb fish of choice, seasoned (overnight preferably)
  • 4 pimento peppers, minced
  • 2 onions, chopped
  • 4 garlic cloves, chopped finely
  • 1 scotch bonnet pepper
  • chives, finely chopped
  • 4 big leaf thyme (poor man pork)
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon oil
  • 5 okra, washed and chopped (can be left whole as well)
  • 1 large carrot, chopped
  • salt to taste
  • 1 tablespoon green seasoning plus more for added flavour
  • add water as needed
  • 1 teaspoon dried parsley
  • 6 tablespoons flour
  • 3 tablespoons corn meal/flour
  • 1/4 water for dumpling
  • 1 teaspoon sugar, for added flavour in dumplings

Instructions

  • to a skillet on medium low heat, add oil, green seasoning, pimento pepper, onions and garlic. mix together, allow to sautee for about a couple of minutes
  • next add in okra and carrot. mix well. next add in 2 cups of water and bring to a boil. add in provision of choice and allow to boil. while that is happening, move on to making the dumplings (optional).
  • in a large bowl, add sugar and water and mix. next add in the corn meal and then the flour. mix into a stiff dough.
  • once provision is boiling, add in the dumplings, salt, cayenne pepper and add water as needed. allow to cook.
  • next add in the fish and the scotch bonnet and allow to cook for another 10 minutes. be sure to keep a close eye on your broth.
  • once finished, remove from heat and serve hot

N.B

  • Dumplings are optional
  • any ground provisions can be added

Ingredients

  • 1 medium sized breadfruit
  • 3 tablespoons flour
  • 11/2 cups carnation evaporated milk
  • 1 tablespoon mustard powder or mustard oil
  • 1/4 teaspoon grated nutmeg
  • salt
  • 5 tablespoons butter or margarine plus extra for mashing the breadfruit
  • 1 medium onion, finely diced
  • 3 cloves garlic, finely diced
  • 1 cup grated cheese (i used cheddar cheese, any cheese of choice can be used)
  • 2-3 tablespoons parsley, chopped finely
  • 1/4 teaspoon cayenne pepper (black pepper can be used as well)

Instructions

  • preheat oven to 350 degrees f
  • peel and wash breadfruit. next, bread fruit in pot with water and add salt to it. allow to cook for about 15-20 minutes. test with a fork (the old fashion mama used to test her provisions) to make sure it’s cooked (do not over cook). remove from heat and drain out the water, mash the bread fruit while hot with a bit of butter and set aside until ready for use
  • in a sauce pan, add butter or margarine and allow to melt on low heat. next add in flour and raise the heat to medium and whisk until cooked (about 4-5 minutes). next add in milk, onion, garlic, parsley, grated nutmeg, cayenne pepper and salt and 3/4 of the grated cheese (reserve the rest for the topping of the pie). whisk until combined . if batter is a bit on the thick side add a bit more milk
  • to assemble the pie: add mashed breadfruit to a pie dish and pour the cheese sauce all over and smooth out (not to worry the sauce will trickle between the breadfruit). place in preheated oven and bake for about 30 minutes (depending on your oven). once nice and golden brown in colour, remove from oven and allow to cool completely before slicing through.
  • serve with a green salad or as part of your sunday dinner
  • enjoy!

  • 1 cup grated cheese
  • 1/4 – 1/2 cup milk
  • 3 pimento peppers

Instructions

  • preheat oven to 350 degrees F
  • in a pot with water, place green fig/banana. add salt, cover and allow to boil until cooked (about 20 minutes. don’t over cook). while figs/bananas are cooking, wash and cup up onions peppers and parsley and set aside
  • allow figs to cool not completely. next place in large bowl and mash. add in milk, grated garlic, onion, parsley, 3/4 of the cheese and pepper of choice. mix until combined. place in a baking dish and smooth out top. add the remaining cheese all over the top and place in preheated oven for about 30-35 minutes (depending on your oven). once baked, remove and allow to cool completely (for about 1 hour) before cutting and serve

Ingredients

  • 2 cups rice
  • 4 cups cooked dried pigeon peas
  • 1 medium sized onion
  • 3 pimento peppers
  • 2 cloves garlic
  • salt to taste
  • 1 lb smoked bones
  • 11/2 lbs chicken back
  • 1 cup coconut milk
  • 4-5 cups water (more or less depending on rice used)
  • 2 tablespoons vegetable oil

Instructions

  • to a pot on medium high heat, add in oil and smoked bones. allow to fry for a few minutes (3-4 minutes) to aid in extracting flavours. add in 1/2 cup water and bring to a boil.
  • once boiling, add pressure pipe/top and pressure for 6-8 minutes (that way the meat is properly cooked nice and succulent). next add in chicken parts/backs once finished pressuring and mix well. allow to sautee for a couple minutes.
  • cut up onion, garlic and pimento peppers. next add in to meat mixture. add in the pigeon peas and mix well.
  • next add in the coconut milk and about 2 cups water in the first instance. mix well. add salt and cover to cook. stir occasionally and check to see if additional water is needed. once cooked, remove from heat and service with any side of choice such as cole slaw, green vegetables etc.
  • enjoy!

** Please note that you can add any flavouring (seasoning of choice) to this one pot meal.

Baked Mac and Cheese

Ingredients

  • 1 pk eve macaroni (300grams)
  • 3 tablespoon margarine
  • 3 tablespoon flour
  • 1 tablespoon mustard oil
  • 3 cups milk
  • 1/2 cup onion finely chopped
  • 1 bay leaf
  • 1/2 tsp paprika
  • 1 egg large
  • 11/4 cups cheese
  • 1 tsp salt (more or less depending on your taste)
  • a dash of cayenne or black pepper

For the topping

  • 3 tablespoon margarine
  • 1 cup homemade or store bought bread crumbs

Instructions

  • preheat oven to 350 degrees F
  • in a pot, bring to boil some water with a bit of salt and add in macaroni. allow to cook for about 8 minutes
  • while pasta is cooking, in a frying pan melt the margarine, whisk in the mustard oil and flour. keep whisking for about 5 minutes. make sure there aren’t any lumps. stir in milk, onion, bay leaf and paprika. simmer for about 10 minutes and remove from heat and remove the bay leaf
  • quickly stir in egg. next stir in 3/4 of the amount of cheese. fold in macaroni and season with salt and pepper. pour into baking dish. top with remaining cheese
  • in another pan, melt margarine and mix in bread crumbs. top the macaroni with the bread crumbs. place in oven and bake for 30 minutes. remove from oven and rest of 5 minutes (if you can lol) before serving
