Grenada Split Peas soup

Ingredients

  • 1-11/2 cups split peas (depends on how thick or thin you like your soup) , pressured
  • 1 lb salted pigtail or any meat of choice
  • ground provisions
  • 1 large onion chopped
  • 4 garlic cloves chopped
  • fresh basil
  • fresh or dried thyme
  • chives
  • salt to taste
  • 2 pimento peppers, minced
  • corn dumplings
  • water
  • 1 teaspoon dried parsley
  • 1 teaspoon cayenne pepper/black pepper
  • 1 large carrot chopped into medium sized pieces

Instructions

  • in a large pot add pressured peas and pigtail. add some water and bring to a boil. next, add in the provisions, seasonings, carrot and water. give it a good stir. add in salt to taste, dried basil and cayenne pepper. be sure to check often for any additional water to added and also the flavour
  • serve hot and enjoy!
