Grenadian Spice Cake

Ingredients

  • 2 cups flour
  • 3/4 cup white sugar (add more if you want it sweeter)
  • 3 eggs
  • 1/2 teaspoon baking powder
  • 1 -2 teaspoon cinnamon powder
  • 1 teaspoon ground ginger powder
  • 1/4 teaspoon glove powder
  • 1/4-1/2 teaspoon grated nutmeg
  • 1 teaspoon tonka bean grated
  • 1/8 mace powder (optional)
  • 227 g margarine or butter ( 1 cup)
  • 1/8 salt
  • 11/2 teaspoon of lime zest or 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • red, green and yellow food gel coloring

Instructions

  • preheat oven to 350 degrees F.
  • in a mixer, add margarine and sugar and cream until light and fluffy about 5-6 minutes. while margarine and sugar is creaming, in a large bowl add in flour and all the spices mentioned in the ingredients, add in baking powder and salt. mix until combined and set aside
  • once the butter and sugar is creamed, add in eggs one at at time, making sure it’s combined after each addition. add in lime zest or vanilla extract. beat just until combined
  • next add in flour mixture, alternating with the milk and ending with flour ( i add 1/3 cup flour at a time and add half of the milk). mix just until combined (DO NOT OVER MIX)
  • butter and flour an 8 inch pan and set aside
  • in three medium sized bowls, distribute the cake batter evenly and add in the gel colors. only mix until combined (do not oven mix)
  • add the batter into the pan (you can layer the colors or add them in 3 equal sections as shown in the video until all the batter is done. give it a good tap to get rid of air bubbles
  • place in preheated oven and bake for about 50 minutes (this depends on your oven)
  • remove from oven once a skewer inserted in the middle comes out clean. allow to cool in the pan for about 10 minutes before removing and place on rack to cool completely
  • cut and serve
