Almond Flour Oat Coconut Bake Recipe

Ingredients

  • 2 cups plain flour
  • 1/2 cup almond flour
  • 1/4 cup oat flour
  • 1 cup freshly grated coconut
  • 3 tablespoons sugar
  • 1 teaspoon yeast
  • 1 teaspoon baking powder
  • 1/2 cup coconut milk (organic or store bought is fine)
  • 1/4 teaspoon salt
  • 2 tablespoons shortening or margarine

Saltfish Sousous Recipe

  • 1/2 lb saltfish
  • 1 medium sized onion, minced
  • 3 garlic, minced
  • 3 large tomatoes, washed and chopped or 6 small ones
  • 1/2 each of a red and green bell pepper (yellow can be added as well)
  • 1/2 cup shredded carrot
  • 2 tablespoons coconut oil
  • cayenne pepper
  • salt to taste

Cocoa Ball Tea

  • 1 cocoa ball
  • 1 large bay leaf or 2 small ones
  • 1/4 teaspoon grated nutmeg
  • 1 cinnamon stick
  • 6 cloves
  • milk of choice
  • sweetener of choice
  • water

Instructions

For Coconut Bake

  • preheat oven to 350 degrees F
  • in large bowl, add grated coconut, sugar, salt, yeast, baking powder and shortening. mix together until well combined. next add in flours and mix. add in coconut milk and mix until a dough is formed. place dough in a warm place to rest for about 25 minutes.
  • once rested, cut into 6 balls and make in to small bakes, place on baking sheet and place in preheated oven. bake for about 25-30 minutes or until golden brown
  • remove from oven and allow to cool completely before serving

For Saltfish Sousous

  • soak saltfish in vinegar water for about a couple hours before using. wash well and season
  • in a large skillet add oil. next add in onion, garlic and bell peppers. allow to sautee for a couple minutes on low medium low heat. next add in tomatoes and grated carrots. mix in well. mix in saltfish and allow to sautee on medium heat for about 3-4 minutes. be sure to taste for flavour and add salt and cayenne or black pepper as needed
  • remove from heat once finished

For the Cocoa Tea

  • in a medium sized pot, add 2 cups of water (in the 1st instance), cocoa ball and spices. cover and allow to boil until the ball is completely melted about 5 minutes. add another 1/2 – 1 cup of water and allow it to boil for another 3 minutes. remove from heat and add in milk and sweetener of choice
  • plate, cup and serve
  • do enjoy!
