- 11/2 cup flour
- 2 tablespoon grated coconut
- 1/4 teaspoon salt
- 1 tablespoon shortening
- 1/4 teaspoon freshly grated nutmeg
- 1/4 teaspoon cinnamon powder
- 1/2 cup coconut milk warm
- 1/2 teaspoon yeast
- 1/4 teaspoon baking powder
- oil for frying
Instructions
- in a large bowl, add flour, coconut, yeast, salt, baking powder, cinnamon, nutmeg and shortening. mix until well combined by hand or a spatula can be used
- next add in coconut milk and mix until a smooth dough is formed. cut into desired size and form into balls. using a towel or a wet paper towel, cover and allow to sit for about 30 minutes
- once risen, place oil on medium heat. once oil is hot enough (do not over heat or the bake wont cook properly), form dough into a flat round bake and place in oil. using a spoon flip the oil all over the bake (this will cause it to raise and float)
- once done, serve with side of choice
