Grenadian Coconut Tart

Ingredients

For the dough

  • 2 cups all purpose flour
  • 1/4 cup water extremely cold
  • 1/2 salt
  • 1/4 cup margarine or butter cold
  • 1/2 cup cookeen or lard cold

For the coconut filling

  • 1 cup shredded coconut
  • 1/4 – 1/2 cup water
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon Grenadian all spice (optional)
  • 1/4 – 1/2 cup sugar
  • 1 teaspoon vanilla extract

Instructions

  • preheat oven to 350 degrees f
  • in a large bowl, add flour and fats. using finger tips or a pastry cutter, cut in the fats to the flour until it’s a crumbly texture.
  • next add water and mix into a dough (do not knead). once dough is formed, wrap in plastic wrap and place in fridge to sit for 15 minutes.
  • while dough is resting, move on to make the coconut filling.
  • mix coconut, spices and vanilla extract. in an iron skillet on medium heat, add coconut mixture. next add in sugar and mix until combined. add the water and stir. be sure to check it constantly so it doesn’t burn. allow to simmer until the water has dried up. once done, remove from heat and place in bowl.
  • remove dough from fridge and place unto a floured countertop. lightly press and using a rolling pin floured, roll out into a not so thin circle. using a large circular cutter, cut into smaller circles.
  • using a spoon place some of the coconut filling in the middle and pull one side of the dough over the mixture to meet the other side of the dough and press. use a fork to create impression around the edges and to aid in the proper sealing of the tart.
  • once finished placed on a lightly greased baking sheet. an egg wash or milk wash can be used to brush the top of the tarts
  • place in preheated oven and bake until golden brown in colour (about 25-30 minutes depending on oven used)
  • once baked remove from oven and allow to cool before enjoying. (this actually tasted better the next day)
