Ingredients
- 2 and a half pounds (roughly) cleaned and peeled yams, boiled until soft
- 1 cup or more grated cheese of choice plus more for the topping
- 2 tablespoons softened margarine or butter
- 2 mediuum sized onions or 1 large one, diced
- 5 pimento peppers, chopped
- 3 garlic cloves, diced
- 1 salt parsley, finely chopped
- 7 twigs of chives, chopped
- salt to taste
- 1/4 – 1/2 cup evaporated milk
- 1 teaspoon cayenne pepper or black pepper
- fine leaf basil (i used a small branch of leaves)
- 1/8 teaspoon of freshly grated nutmeg
Instructions
- preheat oven to 350 degrees f
- in a large bowl, quickly add cooked yam and mash until soft. next add in butter, cheese, sauteed seasonings and milk.
- mix thoroughly. add in salt, pepper and grated nutmeg. mix well.
- place in lightly greased pie dish. topped with more grated cheese and parsley (optional). place in preheated over and bake for 35 minutes or until golden brown.
- allow to cool completely before cutting.
