Yam Pie Recipe

Ingredients

  • 2 and a half pounds (roughly) cleaned and peeled yams, boiled until soft
  • 1 cup or more grated cheese of choice plus more for the topping
  • 2 tablespoons softened margarine or butter
  • 2 mediuum sized onions or 1 large one, diced
  • 5 pimento peppers, chopped
  • 3 garlic cloves, diced
  • 1 salt parsley, finely chopped
  • 7 twigs of chives, chopped
  • salt to taste
  • 1/4 – 1/2 cup evaporated milk
  • 1 teaspoon cayenne pepper or black pepper
  • fine leaf basil (i used a small branch of leaves)
  • 1/8 teaspoon of freshly grated nutmeg

Instructions

  • preheat oven to 350 degrees f
  • in a large bowl, quickly add cooked yam and mash until soft. next add in butter, cheese, sauteed seasonings and milk.
  • mix thoroughly. add in salt, pepper and grated nutmeg. mix well.
  • place in lightly greased pie dish. topped with more grated cheese and parsley (optional). place in preheated over and bake for 35 minutes or until golden brown.
  • allow to cool completely before cutting.
  • enjoy!
