Ingredients

  • 3 cups all purpose flour (sifted)
  • 1 small coconut
  • 3/4 cup – 1 cup of sugar (depends on your taste)
  • 1/2 cup butter or margarine, softened
  • 1/4 cup each : raisins, cherries and mixed fruits (add fruits desire)
  • 1 egg
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt to balance flavours
  • a dash or angostura bitters (or more if desire)
  • 1 teaspoon mixed essence
  • 2 teaspoons cinnamon powder
  • 1 cup of coconut milk
  • 2 teaspoons grated nutmeg

Please Note: that when blending the coconut, add 1 cup of water to get the milk, strain and set aside. use the husk in the bread (do not throw away). if grating by hand, just add the one cup of water after and strain

Instructions

  • finely grate the coconut in a blender with 1 cup of water or grate by hand on the finest side of the grater then add the water and strain. set the milk aside
  • in a separate bowl, mix together the grated coconut, sugar and egg. cut in/mix in the butter. mix well. add the angostura bitters and mixed essence
  • sift together the flour and baking powder. mix in the nutmeg and cinnamon. mix well until combined. add flour to coconut mixture and mix. next add coconut milk and mix until well incorporated.
  • add in the fruits. mix well. place in a large loaf pan or 2 mini loaf pans that has been greased and floured. add cherries to the top. place in preheated oven to bake for about 50 to 55 minutes or until a skewer inserted in the middle comes out clean
  • remove from oven once baked ( for a glazed look, just mix some water and sugar and brush the top of the bread. place back in the oven and bake for an additional 5 minutes and remove ) allow bread to cool in pans for about 5 minutes. remove and place on a rack to cool completely.

Ingredients

  • 41/2 plus 2 tablespoons flour
  • 1 cup rolled oats soaked (oat flour can be used as well)
  • 2 teaspoons yeast
  • 4 tablespoons sugar
  • 1/4 teaspoon salt
  • 1 tablespoon shortening
  • 1/4 cup oil
  • 2 plantains (bluggoe) blended
  • 1/4 cup water (on reserve just in case there is a need to add more liquid)

Instructions

  • preheat oven to 350 degrees F
  • in a mixer, place rolled oats, flour, yeast, sugar, salt and blended plantains and mix on low speed until combined. next add in the oil. allow dough to knead until a medium sticky dough is formed; about 8 – 10 minutes (only add water as needed and more flour if there is a need to do so)
  • once dough is formed, lightly grease a bowl and place dough. allow to sit in a warm place in the kitchen until doubled in size. once dough has risen, punch in the middle and return to mixer to knead for a further 3 minutes.
  • while dough is kneading, lightly grease to loaf pans and set aside
  • place dough on a lightly floured counter top and form into bread. allow to sit for another 45 minutes to double in size
  • once risen for the second time, place in preheated oven for about 35-40 minutes depending on the oven use or until golden brown
  • remove from oven, lightly brush the top with some melted butter or oil (helps keep the bread nice and moist. this is also optional) allow to cool slightly before removing from pans and placed on a rack to cool completely
  • once cooled slice and serve with side of choice
  • enjoy!

Ingredients

  • 3 large ripe plantains (more or less)
  • 3 large eggs
  • 1 onion chopped
  • 3 garlic cloves minced
  • 3 pimento peppers diced
  • green seasoning homemade
  • cayenne and paprika mix
  • salt to taste
  • 2 teaspoons water (optional)
  • oil for frying the plantains and eggs

Instructions

  • in a bowl crack the eggs and seasoned with some green seasoning, cayenne pepper ,salt and the water. mix well and set aside
  • next move on to peeling the plantains and cut them into shapes of your choice
  • place frying pan on medium heat with some oil to come to temperature
  • add plantains and fry until nice and golden brown
  • next, in another smaller frying pan on medium, add 1 tablespoon of oil followed by the onion, garlic, pimento peppers. sauté for a couple of minutes
  • add eggs to the pan and scramble
  • once done, plate and serve hot
  • enjoy!
