Plantain Oat Bread

Ingredients

  • 41/2 plus 2 tablespoons flour
  • 1 cup rolled oats soaked (oat flour can be used as well)
  • 2 teaspoons yeast
  • 4 tablespoons sugar
  • 1/4 teaspoon salt
  • 1 tablespoon shortening
  • 1/4 cup oil
  • 2 plantains (bluggoe) blended
  • 1/4 cup water (on reserve just in case there is a need to add more liquid)

Instructions

  • preheat oven to 350 degrees F
  • in a mixer, place rolled oats, flour, yeast, sugar, salt and blended plantains and mix on low speed until combined. next add in the oil. allow dough to knead until a medium sticky dough is formed; about 8 – 10 minutes (only add water as needed and more flour if there is a need to do so)
  • once dough is formed, lightly grease a bowl and place dough. allow to sit in a warm place in the kitchen until doubled in size. once dough has risen, punch in the middle and return to mixer to knead for a further 3 minutes.
  • while dough is kneading, lightly grease to loaf pans and set aside
  • place dough on a lightly floured counter top and form into bread. allow to sit for another 45 minutes to double in size
  • once risen for the second time, place in preheated oven for about 35-40 minutes depending on the oven use or until golden brown
  • remove from oven, lightly brush the top with some melted butter or oil (helps keep the bread nice and moist. this is also optional) allow to cool slightly before removing from pans and placed on a rack to cool completely
  • once cooled slice and serve with side of choice
