With mango in season, it’s the perfect time to experiment with this delicious Mango Turnover recipe. It’s delicious and flavourful and is perfect to add to your picnic basket.

Ingredients

  • 1 pastry dough prepared (or you can check out my Chicken Pot Pie recipe to see how)
  • 1 cup ripe mango (about 1 large mango cut into cubes)
  • 1 teaspoon corn starch
  • a pinch of salt
  • a pinch of cinnamon (optional)
  • a pinch of nutmeg
  • 2 – 3 tablespoons sugar
  • 1 teaspoon vanilla extract

Instructions

  • preheat oven to 350 degrees f
  • in a skillet on low heat, add in all ingredients with the exception of the vanilla extract. mix well until combined
  • cook until softened (roughly 3-4 minutes)
  • once cooked, turn of heat and add vanilla extract. mix well.
  • allow the mango mixture to cool completely.
  • on a lightly floured counter top, add puff pastry dough. cut into desired shapes and size.
  • add about 1 teaspoon of the mango mixture to the center of one side to the cut dough and fold the other side over it, making sure to crimp (seal) the edges together using a little water.
  • place on a baking sheet lined with parchment paper and place in freezer to rest for 20-30 minutes.
  • remove and egg wash the top. bake in preheated oven for 25-30 minutes or until golden brown.
  • once baked, remove from the oven and allow to cool in the baking sheet for a few minutes.
  • remove and place on rack to cool completely before serving
  • enjoy!

It’s mango season y’all and that means that the pots tun dung lol. This delicious Mango Cake will have your family asking you to make it every single time. Be sure to give it a try.

Ingredients

  • 2 cups regular all purpose flour sifted
  • 3/4 -1 cup sugar (i used 3/4 cups as i don’t like my cakes sweet)
  • 11/2 – 2 cups mango pulp/puree
  • 2 sticks of margarine or butter (227grams or 8 tablespoons)
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon tonka bean, grated
  • 1/4 teaspoon freshly grated nutmeg
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 medium lime juiced
  • 4 eggs
  • 2 teaspoons vanilla extract

Instructions

  • preheat oven to 325 degress f
  • in a large bowl, add flour, baking powder and soda, salt and spices. give it a good whisk to combine. set aside until ready for use.
  • in another bowl if using hand mixer or a stand mixer, add margarine and whisk for a couple seconds. then add sugar and cream until light and fluffy about 5 minutes.
  • next add eggs one at a time beating thoroughly after each addition. next add in line juice and vanilla extract and mix well.
  • next add in mango pulp and mix well. next add in dry mixture a little at a time and gently fold into the butter mixture a little at a time. do not over mix.
  • pour batter into a lightly greased and floured pan.
  • place in preheated oven and bake until a skewer inserted in the middle comes out clean. allow to cool in pan for 10-15 minutes before removing and place on a rack to cool completely.
  • slice and enjoy!
