This delicious Pineapple Upside-down Cake is a most have around the Christmas holidays. It’s moist, flavourful and is the perfect dessert after a delicious Christmas lunch with family. Give it a try today.

Ingredients

For the bottom of the pan

  • 1/4 cup butter, melted
  • maraschino cherries
  • 12 pineapple slices (i used the amount based on the size of my pan)
  • 1/2 – 3/4 cups brown sugar (i used less as i don’t like my cakes too sweet)

For the cake

  • 2 cups cake flour
  • 3/4 – 1 cup sugar
  • 1 tablespoon baking powder
  • 4 large eggs
  • 3/4 cup butter or margarine, softened
  • 3 teaspoons vanilla essence
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1/2 cup pineapple juice
  • 1/2 teaspoon lime juice

Instructions

  • preheat oven to 350 degress f
  • in a 8″ foam pan, add melted butter and add the sugar over it. next, place the pineapple slices over the sugar and place the cherries in the middle of slices.
  • set aside until ready for use.
  • in another bowl, mix the flour, salt and baking powder and set aside.
  • in a large mixing bowl, add softened butter or margarine and beat for a couple seconds to break it down.
  • add in the sugar and mix until light and fluffy/ pale in colour. (about 5 minutes)
  • next add lime juice and add eggs one at a time, mixing thoroughly after each addition. add in flour mixture a third at a time, alternating with milk and pineapple juice mixture, ending with flour. mix until combined (do not over mix).
  • pour cake mixture over the pineapple and give it a few gentle taps to get rid of any air bubbles.
  • place in preheated oven and bake for 35-40 minutes or a skewer inserted in the middle comes out clean.
  • allow to cool in the pan for 10-15 minutes. then run a spatula around the perimeter of the foam pan before releasing it.
  • next flip it upside down on a cake plate to cool completely.
  • next remove the cake bottom and slice and serve with a scoop of ice cream or by itself.
  • enjoy!

Oh my! For someone like me who don’t like too many fruits in my fruit cake, this Light Fruit Cake is the perfect alternative.

Ingredients

  • 1 cup all purpose flour, sifted
  • 1/2 cup (1 stick) margarine (1/2 blue band) or butter, softened
  • 3/4 cup sugar (more or less depending on sweetness preference)
  • 1/4 cup blended fruits
  • 1 teaspoon baking powder
  • 1/4 teaspoon ground nutmeg or freshly grated
  • 1/4 teaspoon ground clove
  • 1 teaspoon ground cinnamon or powder cinnamon
  • 1/4 teaspoon all spice
  • a pinch of salt
  • 3 eggs
  • 1 teaspoon mixed essence
  • 1 teaspoon vanilla extract
  • 1 teaspoon lime zest
  • 1 teaspoon lime juice
  • a dash or 2 of angostura bitters

Instructions

  • preheat oven to 325 degrees f
  • in a large bowl, mix flour, spices, salt and baking powder. set aside until ready for use
  • in a stand mixer or using a hand mixer, add butter and sugar. mix until light and fluffy (about 5 minutes). add in eggs 1 at a time and mix well after each addition. add bitters, blend fruits, essences, lime zest and lime juice. mix until combined. fold in dry ingredients. do not over mix
  • in a greased and floured baking pan (i used an 8″pan) place batter. level the top for even distribution and give it a couple of t taps to get ready of any air bubbles. place in preheated oven and bake until a skewer inserted in middle comes out clean. allow to rest in pan for 10-15 minutes before removing from pan and placing on a rack to completely cool
  • slice and enjoy!

Sponge cakes are a must have in most households, especially on special occasions. This Orange Pound Cake is no exception. moist, tangy but sweet, it’s the perfect dessert.

Ingredients

  • 3 cups flour
  • 2 3/4 cups sugar ( i used 1 and a half simply because i dont like my cakes too sweet)
  • 1 cup margarine or butter (8 ounces or 227gs)
  • 1/2 teaspoon baking soda
  • 1 cup buttermilk
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon powder (optional)
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 tablespoons orange zest
  • 2 tablespoons orange juice

Instructions

  • preheat oven to 350 degrees f
  • in a bowl, mix cinnamon, flour, baking soda and salt. set aside.
  • in a stand mixer or using a hand mixer, cream together the margarine and sugar until light and fluffy (4-5) minutes
  • add in eggs one by one, beating after each addition
  • mix orange zest and orange juice unto butter milk and set aside
  • once the creaming process is over, slowly add in flour in 1/3 cups and alternate with the buttercream mixture, ending with flour (be sure not to over mix)
  • pour batter into greased and flour cake pan and place in preheated oven to bake for 55-60 minutes or until a skewer inserted in the middle comes out clean
  • allow to cool in pan for an hour before removing. any glaze of choice can be added
  • slice, serve and enjoy!

This Cream Cheese Pound Cake is to die for! It’s the perfect cake to impress your guests. Softly delicious, this cake will have you eating the whole one if you are not careful.

Ingredients

  • 2 cups all purpose flour, sifted
  • 11/2 – 2 cups sugar (depends on your sweet level tolerance)
  • 1/2 lb margarine or butter, softened
  • 1 8oz cream cheese, softened
  • 2 teaspoons vanilla essence or extract
  • 1 teaspoon baking powder
  • 6 large eggs
  • lime rind and juice 1 teaspoon (optional)

Instructions

  • preheat oven to 325 degrees f
  • in a large bowl, mix together flour and baking powder, set aside
  • next in a stand mixer or using a hand mixer, place cream cheese and butter or margarine and beat on medium speed for a couple seconds until incorporated. next add in sugar and beat for 5 minutes until light and fluffy. be sure to scrape down the sides occasionally.
  • next add in eggs and flour alternating and ending with flour. add in essence and mix until combined
  • place batter into a bundt pan that has been properly greased and floured. place in preheated oven and allow to bake for 65-75 minutes or until its nice and golden brown and a skewer has been inserted and comes out clean. allow to cool for 10 minutes in pan and remove and place on cool rack to cool completely
  • a glaze can be applied as well for decorating purposes

Ingredients

  • 1/2 cup freshly squeezed orange juice
  • 1/2 cup fresh pineapple juice
  • 3/4 – 1 cup brown sugar
  • 11/2 tablespoon white vinegar
  • 1 51/2 lb frozen boneless ham (or with bone)
  • cloves

Instructions

  • leave frozen ham on counter top overnight to thaw
  • preheat oven to 350 degrees F
  • remove packaging from ham. place ham with net in a baking dish and over in foil. place in preheated oven to bake for 21/2 hours (depends on the packaging instructions). once ham is half way cooked, start on glaze
  • in a pot add, juices (also store bought pineapple orange juice can be used as well), vinegar and sugar. stir until sugar is dissolved. bring to a boil and reduce heat to allow the glaze to simmer for about 15-20 minutes until thicken.
  • remove from heat. check ham at the 3/4 mark (in cooking )and remove from oven. remove foil and remove the ham from the current baking dish and place in another as the sauce/water from the ham may be very salty depending on the ham used, cut off net and cut ham (criss cross). take cloves and place in the grooves. next using a pastry brush, apply the glaze all over make sure the incisions aren’t left out. return back to the oven to bake for the remaining time, making sure to check it constantly.
  • remove from oven allow to cool, and slice into smaller pieces
  • enjoy with bread! ..

  • using a stand mixer or hand mixer, whisk eggs until light and fluffy (about 4 mins). gradually add in granulated sugar. whisk for -5 minutes. while sugar and eggs are whisking, on medium heat add milk and butter to a pot. stir until margarine is melted, remove from heat and set aside until ready to use.
  • in a large bowl add flour, spices and salt. whisk until combine. add dry ingredients to wet and fold in by hand (this is done to avoid over mixing the batter). next add milk mixture to the batter and whisk for about 1 minute until combined
  • place in a greased and floured 9inch square pan and place in oven and bake for about 20-25 minutes or until a skewer inserted in the middle comes out clean. allow to cool completely before cutting
  • enjoy!

  • 1 lb or more of irish potatoes
  • 1/2 tablespoon salt
  • 1 tablespoon green seasoning
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1/4 teaspoon cayenne pepper

Instructions

  • preheat oven to 350 degrees F
  • peel potatoes and cut into small pieces for easier cooking. place in a large boil filled with water and add in the potatoes and salt and leave to sit for about 20 minutes. drain out salted water from potatoes. place unto a kitchen towel or table cloth and pat dry for best results.
  • add dried potatoes in a bowl and add in your seasonings and oil. mix seasonings into potatoes. place potatoes unto a lightly greased baking sheet. be sure to spread them evenly across the baking sheet.
  • place into preheated oven to bake for about 11/2-2 hours depending on the oven used.
  • once finished, remove and allow to cool slightly before placing unto plate and garnish with some fresh basil or dried basil
  • a perfect addition to your Christmas menu.

Ingredients

  • 11/2 lb drumsticks or any chicken parts of choice
  • green seasoning
  • 1/4 teaspoon cayenne pepper (or black pepper)
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1/2-1 teaspoon salt
  • 2 tablespoon olive oil

For the glaze

  • 11/2 – 2 cups freshly made sorrel drink
  • 1 stick cinnamon
  • 2 small or 1 medium bay leaf
  • 5 or six cloves
  • 1/4 teaspoon grated nutmeg
  • 3/4-1 cup sugar (depending on taste)
  • 1 tablespoon corn starch to help thicken glaze
  • 3 tablespoons water to mix in the corn starch

Instructions

  • season meat and allow to marinate for a few hours in advance or overnight for best flavour
  • preheat oven to 350 degrees F
  • in a medium baking dish, add olive oil all over. then add in drumsticks. place in preheated oven. be sure to check it occasionally.
  • once drum stick is almost cooked (about 11/2 hours to 2 hours depending on your oven), start on glaze.
  • over medium heat, add to your pot the sorrel drink, and spices. next add in sugar and stir until melted into the sorrel drink. bring to a boil then add in corn starch. boil for about another minute. remove from heat and remove all the spices. pour glaze over the cooked drumsticks. place back in oven to bake for a further 20 minutes (10 mins on each side)
  • once finished, remove from oven and serve with dish of choice
  • enjoy!

Ingredients

For the dough

  • 1/4 cup plus 2 tablespoons milk
  • 1/4 cup white or brown sugar
  • -1 teaspoon yeast (more can be used depending on choice)
  • 1/2 teaspoon salt
  • 1/4 cup butter
  • 1/4 cup water (on reserve in case more liquid is needed)
  • 1 small egg yolk
  • 2 cups flour
  • 1 teaspoon vanilla extract or essence
  • 1-2 tablespoons melted butter (to brush on dough before applying cinnamon mixture)
  • 1 egg (for egg washing the cinnamon rolls)

For the cinnamon mixture

  • 11/2 tablespoons of cinnamon powder
  • 2 tablespoons sugar
  • 1/4 – 1/2 teaspoons grated nutmeg (optional)

For Icing Glaze

  • 11/2 cups icing sugar (may use more or less depending on how much you want and the amount of cinnamon rolls made)
  • 1/2 tablespoon almond or vanilla extract
  • 1 teaspoon milk or water (may use more or less)

Instructions

  • preheat oven to 350 degrees F
  • in a saucepan on medium low heat, add milk, margarine/butter and sugar. mix until the margarine and sugar has dissolved. remove from and set aside to com to lukewarm temperature
  • meanwhile, in a large bowl or a stand mixer, add the flour, yeast and salt. mix until combined and set aside
  • once to milk mixture has come to lukewarm temperature, add in the egg yolk and vanilla extract. mix until combined. add the wet ingredients to the dry ingredients and mix until smooth (about 6-8 mins) add in reserved water as need. place dough in a lightly greased bowl and allow to sit in a warm area of your kitchen to proof until doubled in size.
  • while dough is proofing, melt butter or margarine and set aside. move on to the cinnamon mixture; combine all ingredients and set aside.
  • once the dough has proofed, punch in the middle to remove the air and gases. place on a lightly floured counter top and using a rolling pin, roll into a rectangular shape. using a pastry brush, brush the melted margarine all over the dough and the cinnamon mixture
  • gentle roll the dough into a log. using a bit of water, seal any edges that might be loose or tuck them in. using a kitchen scissors or a sharp knife, mark out and cut dough into desired shapes. place cinnamon rolls into a lightly greased baking sheet. allow to proof and brush some egg wash over the tops to give it a nice golden brown colour when baking (i added the egg wash before proofing). place in preheated oven and allow to bake for 20-30 minutes depending on your oven.
  • once the rolls are baked, remove from oven and add sweet water to the top while hot( this is optional) this helps to give the dough a glossy look. allow to cool completely
  • while rolls are cooling, add icing sugar, vanilla extract and mix, add water as needed. once the rolls are cooled, drizzle the glaze all over as desired and serve
  • do enjoy!
