This deliciously, flavourful, sweet dessert called Coconut Ginger Fudge , is the perfect addition to your sweet treat box and is famous around parties etc. Don’t hesitate to give it a try today.

Ingredients

  • 2 cups coconut milk
  • 1 tin sweetened condensed milk
  • 2 cups granulated sugar
  • 1 tablespoon butter or margarine
  • 1/4 -1/2 cup or more, freshly grated ginger
  • 1 teaspoon ground cinnamon powder
  • 1/4 teaspoon ground cloves
  • an 1/8 teaspoon salt
  • 1/2 teaspoon vanilla or almond extract

Instructions

  • in a large skillet on medium low heat, add coconut milk, condensed milk, sugar and margarine. Mix well until sugar and butter is melted into the mixture.
  • bring to a boil. once boiling, add grated ginger and give a good mix.
  • continue to mix to avoid mixture spilling over the pot unto the stove; as well as to avoid the mixture from getting burnt
  • once the mixture has started to move away from the sides of your skillet, take a bowl with cold water and drop a soft serve into it.
  • once it forms a soft ball, it’s ready. remove from heat, add the vanilla extract and mix well. allow to cool for about 3 minutes.
  • mix well until the mixture has thickened considerably. place on a greased plate and allow to cool completely before cutting through and serve
  • enjoy!

  • 4 cups thinly sliced coconut
  • 2 1/2 cups brown sugar (add more if desire)
  • 4 cups water
  • 1/2 teaspoon cream of tartar
  • 2 teaspoon ground ginger

Instructions

This Coconut Sponge Cake is the perfect Easter dessert to make for your family and friends. Try it today.

  • 1 3/4 cup all purpose flour
  • 1/2 cup white sugar
  • 1/2 cup margarine or butter, softened
  • 1/2 coconut milk
  • 1/4 cup shredded coconut plus more to add as topping on cake
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon grated nutmeg
  • 1 – 2 teaspoon lime juice
  • 3/4 teaspoons vanilla extract
  • 1/4 teaspoon coconut extract
  • 3 large eggs

Instructions

  • preheat oven to 350 degrees f
  • in a large bowl, add flour, spices, baking powder and salt. mix until combined. set aside until ready for use.
  • to a large bowl, add softened butter and mix for a few seconds. then add in sugar and cream until light and fluffy.
  • next add in eggs one at a time, beating after each addition.
  • add in, lime juice, coconut and vanilla extract. give a quick mix.
  • next add in shredded coconut and mix. alternate between dry and wet ingredients starting of with the flour mixture and ending with the same.
  • pour batter into a prepared pan and give a few taps to get rid of air bubbles. place in preheated oven and bake until a skewer inserted comes out clean (50-55 minutes more or less depending on oven).
  • remove from oven once done and allow to cool in pan for 10 minutes before removing and place on a rack to cool completely.
  • slice and enjoy!

If you are looking for the perfect tart recipe, here is our Grenadian Coconut Tart that you can try. It’s perfect for your finger plates and can be found at most Grenadian party celebrations like birthdays etc.

Ingredients

For the dough

  • 2 cups all purpose flour
  • 1/4 cup water extremely cold
  • 1/2 salt
  • 1/4 cup margarine or butter cold
  • 1/2 cup cookeen or lard cold

For the coconut filling

  • 1 cup shredded coconut
  • 1/4 – 1/2 cup water
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon Grenadian all spice (optional)
  • 1/4 – 1/2 cup sugar
  • 1 teaspoon vanilla extract

Instructions

  • preheat oven to 350 degrees f
  • in a large bowl, add flour and fats. using finger tips or a pastry cutter, cut in the fats to the flour until it’s a crumbly texture.
  • next add water and mix into a dough (do not knead). once dough is formed, wrap in plastic wrap and place in fridge to sit for 15 minutes.
  • while dough is resting, move on to make the coconut filling.
  • mix coconut, spices and vanilla extract. in an iron skillet on medium heat, add coconut mixture. next add in sugar and mix until combined. add the water and stir. be sure to check it constantly so it doesn’t burn. allow to simmer until the water has dried up. once done, remove from heat and place in bowl.
  • remove dough from fridge and place unto a floured countertop. lightly press and using a rolling pin floured, roll out into a not so thin circle. using a large circular cutter, cut into smaller circles.
  • using a spoon place some of the coconut filling in the middle and pull one side of the dough over the mixture to meet the other side of the dough and press. use a fork to create impression around the edges and to aid in the proper sealing of the tart.
  • once finished placed on a lightly greased baking sheet. an egg wash or milk wash can be used to brush the top of the tarts
  • place in preheated oven and bake until golden brown in colour (about 25-30 minutes depending on oven used)
  • once baked remove from oven and allow to cool before enjoying. (this actually tasted better the next day)
  • enjoy!

Ingredients

For the dumplings

  • 11/2 -2 cups of all purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup coconut milk and husk

For the turkey stew

  • 1 lb turkey drumstick, sliced, cleaned and seasoned (pressured optional)
  • Salt to taste
  • 1 large carrot chopped
  • fresh thyme
  • 2 onions chopped
  • 4 garlic cloves chopped
  • 4 pimento peppers minced
  • fresh basil chopped (3 leaves)
  • 1/4 teaspoon
  • 2 tablespoons oil of choice
  • water as needed
  • 1/4 cup frozen green peas (optional)

Instructions

  • in a skillet on medium heat, add oil, and chopped seasonings with the exception of the fresh thyme. mix until combined. allow to sautee for a couple minutes
  • next add in turkey and mix into the seasoning. allow to fry/sautee for a couple minutes. add in some water, the carrots and fresh thyme. mix and allow to cook
  • meanwhile, move on to the dumplings. place a pot with water and bring to a boil. while that is happening, mix up dough. set aside once finished and add to the boiling water. once cooked, drain out water and serve alongside the turkey stew with any salad of choice.
  • enjoy!

  • 1 tablespoon shortening
  • 1/4 teaspoon freshly grated nutmeg
  • 1/4 teaspoon cinnamon powder
  • 1/2 cup coconut milk warm
  • 1/2 teaspoon yeast
  • 1/4 teaspoon baking powder
  • oil for frying
  • Instructions

    • in a large bowl, add flour, coconut, yeast, salt, baking powder, cinnamon, nutmeg and shortening. mix until well combined by hand or a spatula can be used
    • next add in coconut milk and mix until a smooth dough is formed. cut into desired size and form into balls. using a towel or a wet paper towel, cover and allow to sit for about 30 minutes
    • once risen, place oil on medium heat. once oil is hot enough (do not over heat or the bake wont cook properly), form dough into a flat round bake and place in oil. using a spoon flip the oil all over the bake (this will cause it to raise and float)
    • once done, serve with side of choice
    • enjoy!
