Groundnut Sugar Cake

This is one of the best snacks in a Caribbean home. Groundnut Sugar Cake is sweet and gingery in flavour.

Ingredients

  • 1 lb parched peanuts
  • 1 cup sugar (more can be added)
  • grated ginger ( i used about 2-3 tablespoons)
  • 1/4 cup water

Instructions

  • in a large skillet on medium heat, add sugar, water and ginger. bring to a boil and stir until sugar is dissolved. reduce heat to low and allow to simmer for 15 minutes
  • the mixture should have thickened. quickly remove from heat and pour over parched nuts. working quickly, mix until the nuts is coated in the mixture. pour unto a pan and allow to cool completely to set. break/cut into desired pieces
