Ingredients

  • 4 cups thinly sliced coconut
  • 2 1/2 cups brown sugar (add more if desire)
  • 4 cups water
  • 1/2 teaspoon cream of tartar
  • 2 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract

Instructions

  • on medium high heat, place a large skillet. add water, sugar, cinnamon, ginger and salt. mix well and allow to boil
  • once boiling, add in coconut and cream of tartar and mix well
  • allow to cook until the syrup has reduced and it pulls away from the side of the pan.
  • once finished, quickly drop spoon full unto a cookie sheet and allow to dry completely.
