Nigerian Bread and Cheese Paste

Ingredients

For the bread

  • 4 cups flour
  • 2/3 cups warm milk
  • 2 teaspoons yeast
  • 3/4-1 cup sugar
  • 1/2 – 1 teaspoon salt
  • 3 tablespoons melted butter
  • 2 eggs

For the Cheese Paste

  • 1/4 lb regular cheddar cheese
  • 1 garlic clove grated (garlic powder can be used as well)
  • 1/2 of a medium sized onion grated (onion powder can be used 1 teaspoon)
  • 2 tablespoon mustard
  • 1 pinch cayenne pepper (optional)
  • 2 tablespoons butter/margarine

Instructions

For the bread

  • preheat oven at 350 degrees F
  • to a mixing bowl, add 3 cups flour and reserve 1 cup for the kneading process, sugar, yeast and salt. mix well. make a well in the middle of dry mixture. next add in warm milk, melted butter and eggs. mix until well combined (dough would be sticky). place dough on floured counter top and knead until smooth add the reserved flour a little at a time.
  • once dough is formed, place in a lightly greased bowl and allow to double in size in a warm area. once risen, punch to release air bubbles and gas and form into bread. place in a greased bread loaf pan. allow to rise. once risen, brush the top with some melted butter and place in preheated oven to bake for about 35 to 40 minutes or until golden brown.
  • once baked remove from oven and brush the top of the bread with melted butter or olive oil (helps to keep the bread nice and moist). remove from pan after 5 minutes place on cooling and allow to cool complete before cutting.

For the paste

  • grate cheese and add in grated onion, garlic, mayonnaise, butter, mustard and cayenne pepper. mix until well combined and the paste is smooth. serve with bread
