Ingredients
- 2 medium over ripe bananas, pureed
- 1 julie mango, chopped into chunks and pureed
- 1/4 cup grated coconut (optional)
- 250g all purpose flour
- 2 eggs
- 1/4 cup molasses
- 1/2 cup sugar
- 1/2 cup oil
- 1 tablespoon freshly grated ginger
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 tablespoon cinnamon powder
- 1/4 teaspoon tonka bean
- 1/2 teaspoon ground cloves
- 1/4 teaspoon grated nutmeg
- 1/4 teaspoon all spice
- a pinch of salt
- 1/4 – 1/2 cup chopped walnuts plus more for topping
- 1/2 teaspoon mixed essence
- 1/2 teaspoon vanilla essence
- the juice of 1 lime (1 teaspoon of lime or lemon zest can be used as well)
Instructions
- preheat oven to 325degrees f
- in a bowl, add the flour, spices and rising agents and mix thoroughly. set aside until ready for use.
- in a large bowl, add the oil, molasses and sugar. mix well until combined.
- next add in in the pureed bananas and mango and mix well. next add in the eggs, the essences, the lime juice and ginger. be sure to mix very well until combined.
- add in the flour mixture and mix until combined. next add in the walnut (be sure to have extra to place on the top).
- place batter into a greased and floured pan and give a few tops to get ready of air bubbles.
- place in oven and allow to bake for roughly about 1 hour or until skewer inserted in the middle comes out clean.
- once baked, remove from oven and allow to cool in pan for about 10 minutes before removing and placing on rack to cool completely.
