This starchy food is delicious in so many recipes including Yam Porridge . Porridge is one of the easy staples you would find in a Caribbean household for dinner and even breakfast. Give it a try. You won’t be disappointed.

Ingredients

  • 1/2 lb yam, grated
  • 1/2 pound tania, grated
  • 1/2 cup coconut milk
  • 6-7 whole cloves
  • 1 tablespoon grated ginger
  • 3 bay leaves
  • 1/4 teaspoon grated nutmeg
  • 1 stick of cinnamon bark
  • a pinch of salt
  • 1 tin or more of sweetened condensed milk
  • 4-5 or more cups of water

Instructions

  • start off with 1-2 cups of water on medium heat heat and add the spices and salt. allow to come to a boil.
  • once the water is boiling, add in the grated yam and tannia and mix while add to avoid lumps.
  • continue to mix and add water 1 cup at a time (this mixture is a bit thick so keep an eye on the texture)
  • once it has cooked about 15-20 minutes, remove from heat and sweeten.
  • pour into a bowl or cup and serve hot with any side of choice
  • enjoy!

  • 2 cups plain flour
  • 1/2 – 3/4 cups sugar (white or brown or a mixture of both)
  • 2 medium sized over ripe plantain, blended
  • 2 large eggs
  • 1/2 cup margarine, melted
  • 2 tablespoons coconut oil or any flavourless oil of choice
  • 2 teaspoons cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/4 freshly grated nutmeg
  • 1/2 teaspoon tonka bean
  • 1 teaspoon baking powder
  • 1/4 – 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla essence
  • 1/2 teaspoon lime juice or lime peel
  • 1/4 cup walnuts chopped + more for the top

Instructions

  • preheat oven to 350 degrees f
  • in a large bowl, add the flour and spices along with the baking powder, baking soda and salt. give it a really good mix until combined.
  • set aside until ready for use.
  • in another bowl, add eggs, vanilla essence and lime juice. mix for a few seconds until combined. next add in sugar and oil and mix until well incorporated into the egg mixture
  • add in the pureed plantains and mix until combined.
  • next add in the dry mixture and mid just until combined. add in the walnut and fold in with a spatula just until mixed (do not over mix)
  • add to lined muffin pans and give a quick tap to level the top. next add some chopped walnuts and place in preheated oven to bake.
  • bake for roughly 25-30 minutes or until a skewer inserted comes out clean.
  • remove from oven and allow to cool in pan for 10 minutes before placing on a rack to cool completely
  • enjoy!

Grenadian Peanut Butter Snow Ice is one of Grenada’s popular snack/dessert that you can find at break time, lunch and afternoon (in schools especially primary schools). Snow ice is usually made in many different flavours and is perfect for hot days.

Ingredients

  • 1 tin sweetened condensed milk (as shown in video)
  • 1 tin evaporated milk
  • 1/2 cup water
  • 2 heaping tablespoons peanut butter (more can be added if desired)
  • 1/4 teaspoon nutmeg
  • a pinch of ground clove (1/8 teaspoon)
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla essence
  • a pinch of salt
  • small or medium sized plastic bags

Instructions

  • in a medium sized pot on medium high heat, add evaporated milk, peanut butter, and salt. stir until peanut butter is melted .
  • remove from heat, add condensed milk, water and essence. mix thoroughly and allow to cool completely
  • once cooled, place mixture into bags (1/4 cup at a time or more if desiring of a bigger snow ice). place in freezer preferably overnight or at least 8 hours before enjoying.

Ingredients

  • 4 cups flour
  • 1/2 cup sugar
  • 1/2 cup butter/margarine
  • 3/4 cups milk
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 2 tablespoons yeast
  • 1 egg yolk
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/4 – 1/2 teaspoon freshly grated nutmeg
  • 1/4 teaspoon all spice
  • 2 teaspoons vanilla essence

Ingredients for the glaze to make the cross

  • 3 cups powdered sugar
  • 1 tablespoon almond extract
  • 1 tablespoon milk (to be used as needed. start out with a little at a time)

Instructions

  • on low heat, place a sauce pan and add the milk and margarine. stir occasionally as the butter melts. next add in sugar and stir until dissolved.
  • add in water, essence and egg yolk. stir until well combined. remove from heat and set aside to cool at room temperature.
  • in another bowl, mix all the dry ingredients together and make a while in the middle. add in the cool wet mixture, a little at a time, until a sticky consistency is achieved.
  • place sticky dough on a lightly floured counter top and knead for roughly 3 minutes until a smooth ball is formed.
  • place the dough in a lightly greased bowl and set aside in a warm area to rest for 35-40 minutes.
  • punch the dough in the middle to deflate and place onto the floured surface. cut into desired shapes equally.
  • form in to smaller smooth balls and place on a baking sheet to proof for 1 hour.
  • preheat oven to 350 degrees f
  • once the dough has proofed, brush the top with an egg wash and place in the oven to bake until golden brown (about 40-45 or minutes depending on your oven)
  • once the buns have baked, remove from the oven and allow to cool completely.
  • while the buns are cooling, go ahead and make the glaze as shown in the video. place the glaze in a pipping bag. be sure to cut the end of the bag and with steady hands, make the cross on the buns.
  • allow to cross buns to seat to all the glaze to firm up and enjoy with some cheese!

This delicious Meat Pocket Grenadian Style can be found in any Grenadian or Caribbean pastry shop. It’s flaky crust infused with the well seasoned salami will have you going back for more.

Ingredients for the dough

  • 2 cups all purpose flour
  • 1/4 cup (4 ounces) shortening
  • 1/4 cup (4 ounces) margarine or butter
  • 1/8 teaspoon salt
  • 1/4 teaspoon sugar
  • 1/4 cup very cold ice water (may need more or less)
  • 1/8 teaspoon cayenne or black pepper

Ingredients for the filling

  • salami grated (i used turkey sausage simply because i didn’t have salami)
  • green onion chopped
  • fresh thyme
  • grated cheese (optional)
  • 1 teaspoon grated onion
  • 1 teaspoon grated garlic

instructions for making the dough

  • in a large bowl, add flour, sugar and salt. mix well until combined. next cut in the margarine and the shortening until a crumbly texture is achieved.
  • slowly but quickly add very cold ice water until a sticky dough texture is formed. next place on lightly floured countertop and form into a dough. wrap with plastic wrap and place in fridge to rest for about 30 minutes.

Instructions for filling

  • in a bowl, add grated salami, pepper, grated onion and garlic, green onion and fresh thyme and mix well. set aside until ready to use.
  • once dough is rested, place on lightly floured countertop. form into a log or roll out into a rectangular shape (not too thin not too thick).
  • cut into equal squares (big or small). place the filling in the middle and add grated cheese if using.
  • take one side of the dough and cross it over to the other side or middle of the filling and do the rest of the side the same. you should get a pocket shape (hence the name)
  • place on baking sheet lined with parchment paper and egg wash the top. place in preheated oven of 375 degrees f. bake until golden brown (30-35 minutes)
  • remove from oven and allow to cool before serving.
  • enjoy!

Ingredients for the pie crust

  • 1 1/2 sticks very cold margarine or butter (12 tablespoons)
  • 3 cups all purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/3 cup (5 1/2 tablespoons very cold shortening
  • 1/2 cup ice water

Ingredients for the filling

  • 1/2 cup all purpose flour
  • 1/3 cup butter
  • 1 cup diced carrots
  • 1 cup diced irish potatoes (sweet potatoes can be used as well)
  • 1 cup diced onions
  • 2 cloves or garlic diced
  • diced celery
  • 1/2 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon fresh green seasoning
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup broccoli (optional)
  • 1/2 cup whipping cream
  • 2-4 cups cooked chicken breast, diced
  • 2 cups chicken broth
  • 1 cup frozen corn and peas

Instructions for the dough

  • in a food processor, add flour, sugar and salt and pulse until blended.
  • next add in margarine and shortening. pulse about 6-8 times until pea sized crumbles are formed.
  • with the food processor running, slowly add cold water and mix until a dough is formed. place on a lightly floured counter top and form into a ball. wrap the dough is plastic wrap and place in refrigerator to rest for 30 minutes.

Instructions for the filling

  • preheat oven to 400 degrees f
  • cut your pie crust dough in half and roll out 1 piece and place in a 9 inch pie pan and place in the freezer until ready for use. the other half set aside in the fridge.
  • in a large skillet on medium heat, add your margarine and allow to melt. once melted add in onion, garlic, celery, green seasoning, potato, carrots and broccoli. allow to sautee for 10 minutes.
  • next add in cayenne pepper, dried basil, dried thyme, salt and flour. mix until the veggies are well coated in the flour. slowly add in whipping cream and brother, making sure to mix to avoid lumps.
  • once thoroughly mixed, allow to simmer for 10 more minutes making sure to occasionally stir.
  • turn of heat once done and place in prepared pie pan.
  • roll out the 2 half of the pie pastry dough and place it on the top of the filling making sure to pinch the edges to seal it in.
  • make an incision in the middle and place in preheated oven to bake for 50-60 minutes or until golden brown.
  • once baked, remove from oven and allow cool completely or until slightly warm before cutting.
  • enjoy!

It’s Christmas time! If you are in a Caribbean household you know what that means. We are talking fruit cakes, black cakes, sponge cakes, rum cakes, sorrel, ginger beer etc. This Caribbean Black Fruit Cake recipe is my version of a black fruit cake. I hope you enjoy and be sure to try it out.

Ingredients

  • 3 lb soaked fruits blended
  • 1 lb margarine or butter softened
  • 1 lb all purpose flour sifted (about 3 2/3 cups, be sure to weigh it out)
  • 1/2 teaspoon salt
  • 1 lb brown sugar
  • 12 eggs (1 dozen)
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon cloves
  • 1 teaspoon tonka bean
  • 1/2 teaspoon all spice
  • 1 teaspoon freshly grated nutmeg
  • lime peel
  • 1 teaspoon mixed essence
  • 1 teaspoon vanilla essence
  • 1/2 teaspoon lime juice (optional)
  • 4-5 tablespoons browning/burnt sugar (add more or less depending on how black you want your cake)
  • alcohol to pour over the cake once baked (i used quarte cup for the demonstration video)

Instructions

  • preheat oven to 270 degrees f and place a bowl of water at the bottom of your oven (this helps with the moisture of the cake)
  • grease and flour your cake pans properly and set aside
  • in a large bowl add flour, spices, salt and baking powder. whisk well until combined. set aside until ready to be used
  • break eggs in another large bowl. add in the lime peel and whisk lightly. all the lime peel to remain in the whisked eggs until you are ready to use it. set aside
  • using a hand mixer, add softened margarine to bowl and mix for a couple seconds before adding the sugar.
  • once sugar has been added, beat until light and fluffy or pale in colour (roughly 3-5 minutes). next add the essences, lime juice if using and eggs adding some at a time and whisk until combined.
  • be sure to beat well after each addition of the eggs.
  • next add the fruits and mix well. add in your flour mixture and mix just until combined.
  • using a spatula, scrape the sides and mix a bit. next add in the dash of angostura bitters and your browning. fold in well.
  • pour batter into cake pans, distributing equally. give it a few taps to get rid of any air bubbles.
  • place in preheated oven and bake for about 2 1/2 hours. once baked remove from oven and pour alcohol over it while hot.
  • allow to cool completely in pans.
  • to cure until Christmas, simple keep pouring alcohol or wine over it (helps to maintain its moisture as well)
  • slice and serve
  • happy eating!

Ingredients

  • 3 cups all purpose flour
  • 1 cup softened butter or margarine
  • 1-11/2 cups granulated sugar (more or less depending on your level of sweetness taste)
  • 4 large eggs
  • 1 tablespoon baking powder
  • 1 cup buttermilk
  • 2 teaspoons vanilla extract (1 teaspoon vanilla and 1 teaspoon almond extract can be used)
  • 3-4 tablespoons semi sweet chocolate chips
  • 2 tablespoon margarine
  • 1/4 teaspoon salt
  • 1/2 teaspoon lime juice or zest

Instructions

  • preheat oven to 325 degrees f
  • grease a 9″ bundt pan (oil or butter and floured well) and set aside.
  • mix flour, salt and baking powder in a large bowl and set aside until ready for use.
  • in a large bowl, add softened margarine and whipped for a couple seconds. next add sugar and continue to mix until light and fluffy (about 5 minutes)
  • add vanilla extract, lime juice and eggs (add one at time and mix well after each addition). mix well.
  • next add flour mixture and buttermilk alternately, starting and ending with flour.
  • in a microwaveable bowl, add the chocolate chip and margarine and melt (about 30 seconds). mix well until combined.
  • add about 1/4 cup of cake batter to the chocolate mixture and gently fold in until well combined.
  • starting off with the plain cake batter, add the first layer. next add the chocolate mixture finishing off with the remaining plain cake batter.
  • give it a few gentle tap to ensure no air bubbles are present. place in preheated oven and bake until a skewer inserted comes out clean (about 60 minutes or more depending on the oven)
  • once baked, allow to cool completely in pan before removing, slicing and serve
  • enjoy!

Ingredients

  • 2 lbs chicken leg quarters, cleaned and seasoned
  • 2 tablespoons margarine/ butter
  • 1 medium onion, finely sliced

For the sauce

  • 1 tablespoon corn starch + 1/4 water
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 cup water
  • 4 garlic cloves, minced
  • 1 tablespoon freshly grated ginger
  • 1/4 cup brown sugar

Instructions

  • preheat oven to 400 degrees f(200 degrees c)
  • mix starch and 1/4 water until combined and set aside.
  • next in a skillet on medium heat, add sugar, honey, soy sauce, ginger, garlic and water. mix until combined and allow to come to a simmer. add in the corn starch mixture and mix well. allow to cook until thicken (about 3 minutes).
  • once down, remove from heat and allow to cool.
  • in another skillet, add margarine and melt. next, add in the onions and sautee for a couple of minutes on medium low heat. add chicken skin down to sear for about 3 minutes and turn on the other side to do the same.
  • once down, add to a lightly oiled or butter baking dish. add half of the sauce, making sure to coat the chicken well.
  • place in preheated oven and bake for 20 minutes in the first instance. remove, flip the chicken on the other side and pour the remaining sauce all over it.
  • return back to the oven to bake for a further 30 minutes and remove. serve with any dish of side.
  • enjoy!
