This delicious Chicken Soup is the perfect soup for rainy and sick days or even just for comfort. Give it a try and let us know what you think.
Ingredients
- 1 lb chicken wings and thighs, cleaned, cut into medium sized pieces and seasoned
- 2 medium onions, finely chopped
- 4-5 garlic cloves, peeled and chopped
- 3-4 large pimento peppers, minced
- 8 twigs of chives, diced
- rosemary
- basil
- thyme
- hot pepper (scotch bonnet)
- 4 chado benni leaves chopped
- 2 medium sized sweet potatoes, peeled and cut into equal cubes
- 1 medium sized yam, peeled and cut into equal cubes
- cassava (i used about 3 frozen pieces all medium size in length)
- 1 large carrot,, chopped into thick slices
- salt to taste
- 1/2 teaspoon cayenne pepper
- 1 teaspoon dried parsley
- 1 tablespoon green seasoning blend
- 1 1/2 cups chicken broth (chicken stock can be used as well)
- dumplings
- water (5-6 cups, more or less as needed)
- 1 tablespoon butter
- 1 tablespoon oil (any of choice)
Instructions
- in a large skillet on medium heat, add oil and chopped seasonings except the thyme. mix well and allow to sautee for a couple minutes.
- next add the chicken and mix well. sautee for a further 3-5 minutes without adding any liquids. add in chicken broth and a little water. bring to a boil.
- go in with the ground provisions add some more water (3-4 cups). once boiling add in dumplings, thyme, cayenne pepper, scotch bonnet pepper, dried parsley and green seasoning blend. allow to cook and be sure to check if there is a need to add any additional water, salt etc..
- once done, remove from heat and serve hot with a couple slices of avocado on the side.
