Growing up in a Caribbean household meant that Saturdays were for soups. And one of my favourite is Callaloo Soup Recipe (Updated) . Give it a try today and let us know what you think.
Ingredients
- 1 bunch callaloo leaves, washed and cut into small pieces
- 1/2-1 lb smoked pigtail or any meat of choice, cleaned and pressured
- 1 lb dasheen, peeled and chopped into smaller pieces
- 1 lb green fig/banana, peeled and sliced into smaller pieces
- 1 lb sweet potato, peeled and chopped into smaller pieces
- green seasonings, washed and chopped finely (, chado beni, chives, peppers, celery and basil leaves)
- thyme
- 1 large onion, chopped
- 5 garlic cloves, diced
- salt to taste
- 1 teaspoon all purpose seasoning
- 1 teaspoon dried parsley
- 1/4 teaspoon cayenne pepper
- 1 hot scotch bonnet pepper
- a pinch of sugar to bring flavours together
- 1 pk coconut milk
- water as needed
- dumplings
- 1 tablespoon oil
Instructions
- in a large pot on medium heat, add oil and seasonings with the exception of the thyme. mix well and sautee for a couple of minutes
- next add in callaloo and mix well. allow it to sautee for a few minutes. add in some water (about a cup) and allow to cook. (add water as needed).
- once cooked, use a swivel stick to break down the callaloo. then add in coconut powder (about 3/4 of the pack). mix until combined. add in meat and some more water. bring to a boil. once boiling, add provisions. knead some dough for dumplings in the meantime and set aside.
- add dumplings and rest of seasonings and scotch bonnet pepper. gently stir, careful not to break dumplings. bring to a boil. taste for salt and add in additional water as needed.
- once cooked remove from heat and serve hot with avocado slices on the sides.
