Black Eyed Peas Soup

Ingredients

  • carrots
  • 1-2 cups cooked black eyed peas
  • 1/2-1 lb chicken parts (saltfish and any other meat of choice can be used as well), seasoned
  • green plantains
  • sweet potato
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon green seasoning
  • 1/4-1/2 teaspoon cayenne or black pepper
  • 1-2 teaspoons brown sugar (for added flavour)
  • water
  • salt to taste
  • dumplings
  • 1 -2 tablespoons oil

Instructions

  • add oil to pot and allow to heat. next add in chicken parts and allow to fry for about 2-3 minutes. add in onion and garlic and mix in well. next, add in black eyed peas and stir well.
  • add water and allow to come to a boil. while pot is coming to a boil, peel, wash and cut provisions into small pieces for easier cooking. set aside. next make dumpling dough and set aside.
  • check pot and once it’s boiling, add in provisions (any ground provisions of choice can be used), stir, then add in some more water. add in seasonings stir and allow to boil.
  • add in dumplings and stir carefully. taste for salt and flavoring and add where needed. allow to cook. be sure to check it occasionally for any additional salt or water to be added
  • once cooked, remove from heat and serve hot with avocado
