Ingredients
- 3 cups flour
- 6 cups spinach (washed and cleaned)
- 6 cups boiling hot water
- 11/2 teaspoons salt
- 1/4 cup room temperature water or more as needed
- 3 tablespoons olive oil (or any other oil) or melted butter
Instructions
- in a heat proof bowl, add spinach and pour the boiling water all over and allow to sit on counter top for roughly 5 minutes. drain out water and set aside.
- in a food processor, add flour, salt and oil. mix until combined. next add in spinach and pulse until incorporated into the flour mixture. slowly add water as needed and pulse until a smooth slightly sticky dough is formed.
- place dough on lightly floured counter top. knead briefly into a smooth ball. over with bowl and allow to sit for 20 minutes
- cut into four even balls and small balls (8) or desired cuts (larger or smaller). form into thin circles and place on a preheated tawah and cook on each side for 30 each.
- once finished, serve with fillings of choice
