This delicious Meat Pocket Grenadian Style can be found in any Grenadian or Caribbean pastry shop. It’s flaky crust infused with the well seasoned salami will have you going back for more.

Ingredients for the dough

  • 2 cups all purpose flour
  • 1/4 cup (4 ounces) shortening
  • 1/4 cup (4 ounces) margarine or butter
  • 1/8 teaspoon salt
  • 1/4 teaspoon sugar
  • 1/4 cup very cold ice water (may need more or less)
  • 1/8 teaspoon cayenne or black pepper

Ingredients for the filling

  • salami grated (i used turkey sausage simply because i didn’t have salami)
  • green onion chopped
  • fresh thyme
  • grated cheese (optional)
  • 1 teaspoon grated onion
  • 1 teaspoon grated garlic

instructions for making the dough

  • in a large bowl, add flour, sugar and salt. mix well until combined. next cut in the margarine and the shortening until a crumbly texture is achieved.
  • slowly but quickly add very cold ice water until a sticky dough texture is formed. next place on lightly floured countertop and form into a dough. wrap with plastic wrap and place in fridge to rest for about 30 minutes.

Instructions for filling

  • in a bowl, add grated salami, pepper, grated onion and garlic, green onion and fresh thyme and mix well. set aside until ready to use.
  • once dough is rested, place on lightly floured countertop. form into a log or roll out into a rectangular shape (not too thin not too thick).
  • cut into equal squares (big or small). place the filling in the middle and add grated cheese if using.
  • take one side of the dough and cross it over to the other side or middle of the filling and do the rest of the side the same. you should get a pocket shape (hence the name)
  • place on baking sheet lined with parchment paper and egg wash the top. place in preheated oven of 375 degrees f. bake until golden brown (30-35 minutes)
  • remove from oven and allow to cool before serving.
  • enjoy!

This delicious ” Swedish Tea Ring Bread“, is the perfect addition to your Christmas breakfast menu. A little on the sweet side, It’s wonderful flavour will have you going back for seconds. Don’t be afraid to make this recipe your own.

Ingredients

For the dough

  • 2 cups all purpose or regular flour
  • 6 tablespoons milk
  • 1/4 – 1/2 cup sugar (this depends on your level of sweetness desired)
  • 1/4 cup margarine
  • 1/4 cup water
  • 1/2 an egg yolk
  • 1 tablespoon yeast ( i used less as i am trying to not use too much for health reasons)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

For the filling

  • 1/4 cup raisins
  • 1/4 cup dried pineapple cubes
  • 1/4 cup dried mango cubes
  • 1/4 cup dried cranberry
  • 1/4 cup dried pawpaw
  • 1/4 cup walnuts, patched and chopped into small pieces (this is for the crunch)
  • 1 tablespoon cinnamon
  • 1/8 teaspoon ground nutmeg (optional)
  • 3 ounces margarine, melted
  • 1/4 – 1/2 cup brown sugar
  • 1 – 11/2 teaspoon vanilla essence

Instructions

  • in a large bowl, add flour, yeast, and salt. mix thoroughly and set aside.
  • in a skillet on low heat, add milk and margarine. allow the margarine to melt. next add in the sugar and stir until dissolved.
  • add in egg yolk, water and essence and stir thoroughly until combined. remove mixture from heat and allow to cool until warm.
  • add the wet ingredients to the dry mixture and form a rough dough. place on a floured counter top and knead for 3 minutes until smooth.
  • place in a greased bowl and sided aside in a warm corner of your kitchen to proof (about 1 hour).
  • while the dough is proofing, make the filling.
  • add the dried fruits, cinnamon, nutmeg and sugar in a large bowl. mix well. next add the vanilla and melted butter and mix well. set aside until ready to use.
  • once the dough has proofed, place on floured countertop and using a rolling pin, roll into a rectangular shape.
  • place filling on the dough, careful not to go too close to the edge for easy forming of the ring.
  • next roll the dough from one end to the other. be sure to seal the end with some water or butter.
  • next carefully form into a circle, tucking in the edges one into the other and sealing with some water.
  • allow to sit for about 30 minutes before making your incisions (helps with cutting easily once cooled). egg wash and place in a preheated oven at 350 degrees f.
  • bake for 30-35 minutes or until nice and golden brown.
  • allow to cool completely before cutting.
  • a simple glaze can be made to place on the top for decorative purposes.
  • enjoy!

Ingredients

  • homemade puff pastry or store bought one can be used (to see how i make puff pastry from scratch, check out my beef wellington recipe)
  • 1 cup grated cheese ( i used cheddar)
  • 1 teaspoon dry basil
  • 1 teaspoon dry parsley
  • 1/2 teaspoon dry small thyme
  • 1/4 teaspoon cayenne/black pepper
  • 1 glove garlic grated
  • 1 teaspoon mustard
  • 1 egg (for egg wash )
  • 1/4 teaspoon turmeric powder for a vibrant color once baked

Ingredients

  • preheat oven to 350 degrees f
  • in a large bowl, place grated cheese, basil, parsley, thyme, cayenne and mustard. mix until combined and set aside.
  • on a lightly floured counter top, place pastry dough. lightly dust the dough with flour and roll out to desired length (about 6 inches in length. shouldn’t be too thick or too thin). cut into circular, square or rectangle shapes. using a teaspoon, add cheese paste/filling in the middle (about 1/2 teaspoon to 1 teaspoon depending on the shape and length of the pie dough. seal edges with water. pick up half of the dough and place it over the filling neatly and press the sides together. take a fork and pressed together.
  • once done, place in refrigerator for about 10 minutes to chill. while pies are chilling, place egg and turmeric in a small bowl and whisk until completely combined. after 10 minutes remove from refrigerator and using a scissors make cuts or incisions on the top of the pies
  • using a pastry brush, brush the top of the pies with the egg wash mixture. place in preheated oven to bake for about 20-30 minutes
  • once baked, remove from oven and allow to cool serving
  • enjoy!

*Please note that the same pastry dough used for the wellington is the same one that can be used for meat pies etc.
