1/2 – 1 cup sugar (i used half simply because i don’t use too much sugar, and it was still delicious)
1 teaspoon baking powder
2 eggs
1/2 cup butter milk
1 teaspoon cinnamon powder divided in half
1/4 teaspoon nutmeg (optional)
1/4 cup butter or margarine
1/4 cup oil
1/2 teaspoon molasses
1 teaspoon vanilla extract or essence
For the topping
2 tablespoons white sugar
2 tablespoons brown sugar
1/4 cup margarine melted
1/2 teaspoon cinnamon
Instructions
preheat oven to 350 degrees f
in a bowl mix together spices and baking powder. set aside until ready for use
next in large bowl or mixer add oil, margarine and sugar. beat until light and fluffy
add eggs and vanilla and mix until combined
fold in dry ingredients and buttermilk. and mix in gently until smooth
in a small bowl add some of the batter and mix in cinnamon and molasses
in a lightly greased loaf pan, add half of the batter and go in with half of the cinnamon molasses mixture. add the rest of the batter and cinnamon molasses mixture. using a knife tip, create swirls in the bread, meshing both mixtures. give a gently tap to get rid of air bubbles
place in preheated oven and bake for 50 – 55 minutes or until a skewer inserted in the middle comes out clean
remove from oven and allow to cool in pan for 10 minutes
in the mean time place melted butter and cinnamon mixture in shallow long plates respectively
coat the edges of the bread with the melted butter and coat over with cinnamon mixture. slice, serve and enjoy!
