Ingredients
- 4-5 cups plain flour
- 1 cup whole wheat flour (optional)
- 4 tablespoons brown sugar
- 2 teaspoons yeast
- 1 cup warm water (plus 1/4 cup for the blending of the green banana)
- 3 medium sized slightly ripe green banana/green fig cooked
- 1/4 cup olive oil or coconut oil
- 2 tablespoons shortening, margarine or butter
Instructions
- preheat oven at 350 degrees F
- place the 1/4 cup of water and green banana/fig in a blender and blend for about 30 seconds
- to a mixer start off by adding 3 cups of plain flour, whole wheat flour, sugar, yeast, shortening and the blended bananas. on low speed, mix until well combined
- next add in the olive oil
- add in the rest of the water and allow bread to form a dough (about 8 minutes if using a kitchenaid)
- add the additional reserved flour as needed
- once finished, place dough in a lightly greased bowl and allow it to rest for about an hour or until it has doubled in size
- once risen, punch in the middle and return to the mixer to mix for an additional 3 minutes. once down place on a floured counter and form into two loaves. place in pan and allow to sit for another 45 mins until doubled in size
- next place in preheated oven for about 35-40 mins (more or less depending on your oven make) or until golden brown
- once finished remove from oven and allow to sit in the pans for about 5 mins and then remove from pan, place on a cooling rack to cool completely
- serve with any side of your choice(can be served hot as well)
