Ingredients
- 2 medium or 1 large green plantain
- 1 cup coconut milk
- 1/4 teaspoon grated nutmeg
- 2 bayleaves
- 1 stick of cinnamon or 2 teaspoons ground cinnamon
- 1 tablespoon ginger grated (or more as needed)
- 5 cloves
- 3 cups water
- 1 tin condensed milk or any other sweetener of choice
Instructions
- wash and peel plantains. next cut and place in blender with 1 cup of water. blend for 30 seconds
- add 1 cup of water to a pot, add in spices with the exception of ginger (which will be added later on) and bring to a boil. once boiling add in blended plantain. (be sure to stir constantly to avoid lumps and sticking to the bottom or sides of the pot. add in water a little a time. add in coconut milk while continuing to stir.
- keep stirring until cooked about 5 mins (you may want to double the cooking time if doubling the recipe). next add in ginger and go in with sweetener of choice. once added, stir for another minute or so. once finished, remove from heat and plate.
- garnish with some grated nutmeg.
- serve hot. enjoy!
N.B
- be sure to have your heat on medium low to avoid burning and sticking
- any sweetener of choice can be used
- if have never tried making this porridge with any other milk than the above mentioned
