Ingredients
- 11/4 cups flour
- 1 teaspoon yeast
- 1 teaspoon sugar or 1/4 teaspoon honey
- 1/4 to 1/2 teaspoon salt
- 1/2 teaspoon dried thyme or 1/2 tablespoon chopped fresh thyme
- 1/2 teaspoon dried rosemary or 1/2 tablespoon chopped fresh rosemary
- 1 large or 2 medium garlic cloves minced
- 3/4 cup olive oil
- 1/2 cup warm water
- 1/8-1/4 teaspoon black pepper or white pepper

Instructions
- preheat oven to 375 degrees f
- in a skillet on low heat, combine olive oil, minced garlic, thyme, rosemary and black or white pepper. cook, stirring occasionally for 5 to 10 minutes until aromatic (don’t all the garlic to turn brown) and set aside
- in a large bowl, add warm water, sugar and yeast. stir, then let it sit to proof for 5 minutes. add 1/2 cup of the flour and 2 tablespoons of the olive oil mixture to the yeast. stir a few times until combined (4-5 times or as needed) allow to rest for a further 5 minutes
- stir in the remaining flour and salt and and mix until a sticky soft dough is formed. on a floured counter top, place dough and knead for 10 minutes until a smooth dough is formed. allow to rest for an hour or until the dough has doubled in size.
- in a baking dish, add a little of the remaining olive oil mixture and coat it well. next punch dough in middle, add to dish and spread using finger tips until it’s evenly distributed. using your knuckles, make impressions all over the dough. add the remaining olive oil mixture all over. next go in with onions, cheese and turkey sausage
- place in preheated oven to bake for an hour (more or less depending on the oven used) until golden brown
