Ingredients
- 2 cups flour plus 1 cup reserved
- 2 tablespoons sugar
- 11/2 teaspoons yeast
- 1/4-1/2 teaspoon salt
- 1/4 cup water
- 1/2 cup milk
- 2 tablespoons margarine
- 3 tablespoons grated coconut
- 1-2 tablespoons flax seed
Instructions
- preheat oven to 375 degrees F
- in an electric mixer (this can be done by hand as well), add 3/4 cups of the flour, yeast, grated coconut, flax seed and salt. mix well on medium speed. set aside
- in a skillet on low heat, add margarine, water and milk. mix until the margarine is melted. mix should be warm and not hot. remove from heat and add to dry mixture, beating on medium speed for 2 minutes. add in the flour 1/4 cup at a time and knead until a sticky dough is formed. if it’s too wet use some of the reserved 1 cup of flour and add as needed.
- on a lightly floured counter top, place sticky dough and knead for 8-10 minutes until a smooth dough is formed. allow to rest for 10 minutes.
- in the meantime, lightly grease a 9 inch baking dish and set aside.
- after 10 minutes, cut dough into half and then into smaller pieces (should get 8 equal parts) and form into small balls. place in lightly greased baking dish and cover with a kitchen towel.
- allow to rest for 30 minutes until it has doubled in size. place in preheated oven and allow to bake for 20 minutes or until golden brown(please not that this is dependent on your oven)
- once baked, remove and serve hot.
