Ingredients
- 2 cups coconut milk
- 1 tin sweetened condensed milk
- 2 cups granulated sugar
- 1 tablespoon butter or margarine
- 1/4 -1/2 cup or more, freshly grated ginger
- 1 teaspoon ground cinnamon powder
- 1/4 teaspoon ground cloves
- an 1/8 teaspoon salt
- 1/2 teaspoon vanilla or almond extract
Instructions
- in a large skillet on medium low heat, add coconut milk, condensed milk, sugar and margarine. Mix well until sugar and butter is melted into the mixture.
- bring to a boil. once boiling, add grated ginger and give a good mix.
- continue to mix to avoid mixture spilling over the pot unto the stove; as well as to avoid the mixture from getting burnt
- once the mixture has started to move away from the sides of your skillet, take a bowl with cold water and drop a soft serve into it.
- once it forms a soft ball, it’s ready. remove from heat, add the vanilla extract and mix well. allow to cool for about 3 minutes.
- mix well until the mixture has thickened considerably. place on a greased plate and allow to cool completely before cutting through and serve
