Ingredients
- dumplings (a mixture of plain flour and corn meal and a bit of water)
- ground provisions (any of your choice such as plantain, cassava, sweet potato etc)
- 1 onion chopped
- 3 gloves of garlic diced
- 1 lb chicken (any meat of your choice)
- 3 pimento peppers
- homemade green seasoning salt
- 1 tablespoon (or more as need) browning
- 1 teaspoon of brown sugar (optional)
- 1 tablespoon oil (optional)
- 1 cup coconut milk (optional)
- water as needed
Instructions
- peel and wash ground provisions and set aside
- start of by adding seasoned chicken to pot already on the stove and add in the browning. give it a really good mix and allow it to boil
- while chicken is boiling, move on to mixing the dumpling and set aside
- once the pot is boiling add in onion, garlic and peppers. give it a good mix and go in with 1 cup of water or coconut milk
- next add in ground provisions and add the dumplings last. go right in with some homemade green seasoning and salt and allow it to boil
- be sure to check for flavour and stir constantly to ensure that it does not stick to the pot. at this point you can add in the sugar which will help bring out the wonderful flavours in this dish
- once finished turn of stove and serve hot. garnish with some chives(green onion)
- enjoy!
Please note the following:
- dumplings can be omitted if you are not a fan. this mixture is of plain flour and corn meal which i made based on eye balling as is commonly known in the Caribbean
- any meat of choice can be used
- the sugar added helps with balancing and bringing out the flavour of this dish
