Sauteed Tomato With Fried Fish and Toast

Ingredients

For the fried fish

  • fresh tuna (any amount of your choice) seasoned
  • 1 tablespoon baking powder (this helps with the giving the fish a crispy exterior
  • 4 tablespoons plain flour
  • oil for frying

Instructions

  • place frying pan on stove with oil on medium heat
  • while oil is heating, mix the baking powder and the flour together. coat the fish in the flour and dust of any excess flour and set aside
  • once oil is hot, place fish in pan. fry until nice and golden brown (about 3 mins or so on each side. more or less)
  • set fried fish aside

For the sauteed Tomatoes

  • tomatoes (12 medium sized plum tomatoes; add more or less)
  • 1 onion chopped
  • 3 garlic cloves diced
  • salt to taste
  • 3 pimento peppers diced
  • 1 teaspoon homemade green seasoning
  • a pinch of celery powder (optional)
  • 1 teaspoon of paprika and cayenne mix
  • 1 tablespoon avocado oil (or any oil of choice)

Instructions

  • place pan on stove. add in oil and green seasoning. mix until well combined
  • add in onion, garlic and pimento peppers. give it a good mix
  • add in tomatoes, follow up with seasoning (celery, paprika mix and salt to taste) mix until well combined
  • allow to sautee for a few minutes. be sure to check for flavours etc
  • once it’s done served with the fish and some toasted bread
