Ingredients
- 1 small ripe breadfruit (about 1 and 1/2), washed, peeled and blended
- 1 medium sized onion, minced
- 3 garlic cloves minced
- 4 twigs of chives, chopped
- 1/2 sweet pepper, chopped
- 2 pimento peppers, chopped
- 2 big leave thyme, chopped
- a few rosemary leaves
- 2 chado beni leaves, chopped
- a few basil leaves, chopped.
- 1 teaspoon salt
- 1/2 teaspoon cayenne or any other pepper of choice
- oil for frying
Instructions
- in a large bowl, add breadfruit and seasonings mentioned. mix until well combined.
- allow to sit for at least 30 minutes to allow the flavours to be properly distributed in the the breadfruit, making it more flavourful
- on medium low heat, in a skillet, add oil and allow to heat.
- using a spoon, drop the mixture into the oil a little at a time. (be sure not to crowd the skillet to allow the fritters enough space to cook)
- fry until golden brown (roughly 5 minutes per side)
- once finished, serve with sauce or dipping of choice.
