Almond Flour Oat Bread

Ingredients

  • 2 3/4 cups flour
  • 1/2 cup almond flour
  • 1 cup rolled oats
  • 11/4 cups water warm
  • 1/4 cup olive oil
  • 4 tablespoons sugar
  • 2 teaspoons yeast
  • 1/4 – 1/2 teaspoon salt

Instructions

  • using 1 cup of water soak oats for about 25-30 minutes
  • preheat oven to 350 degrees F
  • in a mixer, add in soaked oats, flours, sugar, salt and yeast. on low speed, mix until combined. slowly add in olive oil and the remaining warm water
  • knead for about 8 minutes until a smooth sticky dough is formed. place dough in a lightly greased bowl and place in a warm area of your kitchen to double in size
  • once doubled in size, punch down the middle and return to mixer to knead for a further 3 minutes. place on lightly floured countertop and form into breads. place into to lightly greased loaf pans and allow to sit for another 45 minutes to raise for a second time.
  • place in preheated oven and bake for about 30-35 minutes or until golden brown. remove from oven and allow to cool in pan for 10 minutes. remove and place on rack to cool completely.
  • serve with any side of choice
