Ingredients
- 1 3/4 cup all purpose flour
- 1/2 cup white sugar
- 1/2 cup margarine or butter, softened
- 1/2 coconut milk
- 1/4 cup shredded coconut plus more to add as topping on cake
- 2 teaspoons baking powder
- 1 teaspoon cinnamon powder
- 1/4 teaspoon salt
- 1/4 teaspoon grated nutmeg
- 1 – 2 teaspoon lime juice
- 3/4 teaspoons vanilla extract
- 1/4 teaspoon coconut extract
- 3 large eggs
Instructions
- preheat oven to 350 degrees f
- in a large bowl, add flour, spices, baking powder and salt. mix until combined. set aside until ready for use.
- to a large bowl, add softened butter and mix for a few seconds. then add in sugar and cream until light and fluffy.
- next add in eggs one at a time, beating after each addition.
- add in, lime juice, coconut and vanilla extract. give a quick mix.
- next add in shredded coconut and mix. alternate between dry and wet ingredients starting of with the flour mixture and ending with the same.
- pour batter into a prepared pan and give a few taps to get rid of air bubbles. place in preheated oven and bake until a skewer inserted comes out clean (50-55 minutes more or less depending on oven).
- remove from oven once done and allow to cool in pan for 10 minutes before removing and place on a rack to cool completely.
- slice and enjoy!
