Ingredients

  • 3/4 cups flour
  • 1/4 cup saltfish soaked and washed (it can boiled to help get rid of excess salt)
  • 1/4 cup water
  • 1 teaspoon black pepper salt to taste
  • 1 large onion
  • 1 tablespoon homemade green seasoning (which consist of chives and thyme to name a few)
  • 2 garlic gloves minced
  • 3 pimento peppers
  • 1/2 sweet pepper
  • 1/4 teaspoon homemade hot pepper sauce
  • oil for frying

Instructions

  • wash or boil the saltfish to get rid of excess salt and smell
  • to the saltfish add some homemade green seasoning, peppers, onion, garlic, hot pepper sauce and black pepper. mix well
  • next add in the flour and water bit by bit and set aside to marinade (about 30 mins or overnight)
  • place a frying pan on the stove on medium and add some oil and allow to heat or come to temperature
  • add the fish cakes into the oil in any shape you like and allow to fry for a couple minutes on one side before turning over to the other side
  • once finished be sure to tap out any excess oil and service with coconut bake or just have it as a snack on its own
