Who doesn’t like breadfruit anything in a caribbean home? This Stir Fried Breadfruit is the perfect addition to your breakfast, lunch or dinner plate. It’s filled with flavours from the seasonings added and is very easy to make. Try it today.

Ingredients

  • 1 large fruit, cleaned and peeled
  • 1 medium onion, chopped
  • salt to taste
  • 1/4 teaspoon cayenne
  • 1/4 teaspoon parsley
  • 3 garlic cloves, chopped
  • 1 tablespoon green seasoning
  • 2 pimento peppers, finely chopped
  • 1-2 tablespoons oil of choice

Instructions

  • in a large pot with water, add salt and breadfruit. be sure to check for when it’s done. do not over cook.
  • once cooked, remove from heat, drain and set aside to cool completely. chop into medium sized cubes
  • in a large skillet on medium heat, add oil and seasonings. allow to sautee from a couple minutes. add in cayenne and dried parsley. mix well and fry for about 5 minutes to allow the breadfruit to be properly infused with the seasonings
  • enjoy with any meat side of choice such as saltfish sous, smoked herrings or stewed meat.

Coconut Bake Ingredients

  • 1 cup grated coconut
  • 1/2 cup coconut milk
  • 3 tablespoons sugar
  • 1 teaspoon baking powder
  • 1 teaspoon yeast
  • 2 tablespoons butter / margarine / shortening
  • 2 cups sifted plain flour plus two tablespoons

Saltfish Ingredients

  • 1/4 cup saltfish soaked or boiled to help remove excessive salt
  • 1 onion chopped
  • 2 garlic cloves minced
  • homemade green seasoning
  • 5 tomatoes chopped
  • 1 carrot grated
  • 1 teaspoon dried parley
  • 1 teaspoon dried basil salt (optional)
  • a dash paprika and cayenne mix
  • water (optional)
  • 1 tablespoon oil of choice

Instructions (Coconut Bake)

  • preheat oven at 350 degrees F
  • to a mixing bowl, add grated coconut, sugar, yeast, baking powder and shortening. mix well.
  • next add in flour and mix until well combined
  • add in coconut milk and mix until a dough is formed
  • allow to rest for about 20 minutes
  • form bake in round shape on tawah or baking sheet and place in preheated oven for about 30 – 35 mins (depending on your stove) or until nice and golden brown
  • once finished remove from oven and sit aside to cool

Instructions (Saltfish)

  • soak saltfish for a couple of hours or boil for about 15 mins to help get rid of excessive salt
  • once that process is done, wash well and season with homemade seasoning or any seasoning of your choice. set aside
  • in a frying pan on medium heat, add in green seasoning, onion, garlic, tomato and carrots. mix well and allow to to sautee for 3-5 mins
  • next add in salt fish, cayenne and paprika mix, parsley and basil. mix well. allow to cook for a few minutes (be sure to taste for salt etc)
  • add water as needed
  • once finished, serve hot with coconut bake
  • enjoy!

N.B seasonings are added based on taste and liking
