This starchy food is delicious in so many recipes including Yam Porridge . Porridge is one of the easy staples you would find in a Caribbean household for dinner and even breakfast. Give it a try. You won’t be disappointed.

Ingredients

  • 1/2 lb yam, grated
  • 1/2 pound tania, grated
  • 1/2 cup coconut milk
  • 6-7 whole cloves
  • 1 tablespoon grated ginger
  • 3 bay leaves
  • 1/4 teaspoon grated nutmeg
  • 1 stick of cinnamon bark
  • a pinch of salt
  • 1 tin or more of sweetened condensed milk
  • 4-5 or more cups of water

Instructions

  • start off with 1-2 cups of water on medium heat heat and add the spices and salt. allow to come to a boil.
  • once the water is boiling, add in the grated yam and tannia and mix while add to avoid lumps.
  • continue to mix and add water 1 cup at a time (this mixture is a bit thick so keep an eye on the texture)
  • once it has cooked about 15-20 minutes, remove from heat and sweeten.
  • pour into a bowl or cup and serve hot with any side of choice
  • enjoy!

Ingredients

  • 2 medium or 1 large green plantain
  • 1 cup coconut milk
  • 1/4 teaspoon grated nutmeg
  • 2 bayleaves
  • 1 stick of cinnamon or 2 teaspoons ground cinnamon
  • 1 tablespoon ginger grated (or more as needed)
  • 5 cloves
  • 3 cups water
  • 1 tin condensed milk or any other sweetener of choice

Instructions

  • wash and peel plantains. next cut and place in blender with 1 cup of water. blend for 30 seconds
  • add 1 cup of water to a pot, add in spices with the exception of ginger (which will be added later on) and bring to a boil. once boiling add in blended plantain. (be sure to stir constantly to avoid lumps and sticking to the bottom or sides of the pot. add in water a little a time. add in coconut milk while continuing to stir.
  • keep stirring until cooked about 5 mins (you may want to double the cooking time if doubling the recipe). next add in ginger and go in with sweetener of choice. once added, stir for another minute or so. once finished, remove from heat and plate.
  • garnish with some grated nutmeg.
  • serve hot. enjoy!

N.B

  • be sure to have your heat on medium low to avoid burning and sticking
  • any sweetener of choice can be used
  • if have never tried making this porridge with any other milk than the above mentioned

Ingredients

  • 11/2 cups grated cassava
  • water (about 4 cups)
  • sweetened condensed milk or sugar to taste
  • 1 cup coconut milk organic (you can use any kind of your choice)
  • cloves
  • bayleaf
  • cinnamon powder

Instructions

  • start of by adding 1 cup of water to your pot and add in spices. allow to come to a boil
  • once boiling, add in grated cassava and stir constantly to avoid lumps or sticking to the pot
  • once cassava starts getting thick, gradually add in the remaining water
  • continue to stir until the cassava turns from white to a greyish colour which signifies that it’s cooked
  • next add in coconut milk and give it a really good stir
  • add in condensed milk or sweetener of choice and mix really well.
  • once done turn of stove and serve hot. can be garnished with some grated nutmeg

Tannia Log

Ingredients

  • 1/2 – 1 cup of grated tannia
  • 1/4 teaspoon grated nutmeg
  • 1 bayleaf
  • 1 small/medium cinnamon stick or 1 teaspoon grounded cinnamon
  • water
  • 1 tin condensed milk

Instructions

  • with pot on stove on medium heat, add in water, spices and bring to a boil
  • next go in with tannia be sure to add slowly while stirring constantly to avoid lump
  • allow to cook (you would notice that the tannia will go from white to a light grey as it cooks0
  • be sure to add more water once needed
  • next go in with the condensed milk and sweeten to taste or based on your liking
  • once sweetened allow to simmer for a few more minutes all the while making sure to stir
  • once finished, pour into cup or soup bowl. garnish with some grated nutmeg.
