Plantains are a staple in most Caribbean households and is used in many different ways. This delicious Ripe Plantain Muffins recipe is perfect to add to your dessert list. It can be made sweet or savoury. Give it a try today. You won’t be disappointed.

Ingredients

  • 2 cups plain flour
  • 1/2 – 3/4 cups sugar (white or brown or a mixture of both)
  • 2 medium sized over ripe plantain, blended
  • 2 large eggs
  • 1/2 cup margarine, melted
  • 2 tablespoons coconut oil or any flavourless oil of choice
  • 2 teaspoons cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/4 freshly grated nutmeg
  • 1/2 teaspoon tonka bean
  • 1 teaspoon baking powder
  • 1/4 – 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla essence
  • 1/2 teaspoon lime juice or lime peel
  • 1/4 cup walnuts chopped + more for the top

Instructions

  • preheat oven to 350 degrees f
  • in a large bowl, add the flour and spices along with the baking powder, baking soda and salt. give it a really good mix until combined.
  • set aside until ready for use.
  • in another bowl, add eggs, vanilla essence and lime juice. mix for a few seconds until combined. next add in sugar and oil and mix until well incorporated into the egg mixture
  • add in the pureed plantains and mix until combined.
  • next add in the dry mixture and mid just until combined. add in the walnut and fold in with a spatula just until mixed (do not over mix)
  • add to lined muffin pans and give a quick tap to level the top. next add some chopped walnuts and place in preheated oven to bake.
  • bake for roughly 25-30 minutes or until a skewer inserted comes out clean.
  • remove from oven and allow to cool in pan for 10 minutes before placing on a rack to cool completely
  • enjoy!

Ingredients

  • 2 cups all purpose flour
  • 1 cup yellow cornmeal
  • 3/4 cup sugar
  • 3/4 cup sour cream or plain yogurt
  • 1/2 cup buttermilk
  • 1/2 cup melted margarine or butter
  • 2 tablespoons oil, optional
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon power
  • 1/4 teaspoon grated nutmeg
  • 1/4 teaspoon tonka bean

Instructions

  • preheat oven to 350 degrees f
  • in a large bowl, add all dry ingredients with the exception of the sugar and mix until combined. set aside until ready to use.
  • in another bowl, add eggs and whipped until light and fluffy.
  • next add in sugar and mix until combined.
  • add the melted butter, yogurt and buttermilk. mix until combined. add dry mixture a little at a time and mix well (remember to be aware of overmixing)
  • in a muffin pan of 12, add the batter. give it a few taps to get rid of excess air etc.
  • bake for 20 minutes until golden brown or a skewer inserted comes out clean.
  • allow to cool in pan for 10 minutes and remove and place on rack to cool completely.
